I woke up at 3:45 and couldn’t go back to sleep before the alarm woke me. So had half a banana, half a grapefruit, OJ and coffee.
Came back at 8:30 after an unsuccessful attempt at vaccination and made home fries and 2 jumbo eggs over easy with another cup of coffee. |

If you make it, I highly recommend DeCecco rigatoni - the pasta is thick and meaty and gives the dish a nice texture. I also use an entire US can of tomato paste (I think our standard size packaging is bigger than in Israel), which sort of thickens up the sauce nicely. And I probably almost double the spinach in the recipe - I just throw in the contents of the big plastic containers they sell at my supermarket. I figure vegetables are always good! :D This pandemic I've made a lot of casseroles... |
Leftover atomic sub sandwich from Sunday, but with added Trader Joe’s hot Italian pepper sauce. I’ll assume that they’re Italian chilies and not Calabrian, esp factoring price and branding.

Palindrome Inauguration Day! Both 1/20/21 and 1/20/2021 are palindromes and I’m not sure when we last had a special palindrome inauguration - maybe 1981, surely not 2001. 1/8/81? Doubtful. Wow. Maybe this is mega special.

Leftover sushi from Tuesday - I can’t identify the piece with the red tobiko. It’s like a bed of white rice, something else that could be imitation crab, and then the tobiko and some crunchy things.

Yesterday lunch was an attempt at leftover international quasi-loco moco. I had a bunch of leftover rice (that I had made with some of the chilis and sauce from one of the Hunan dishes from a couple days earlier). I had a leftover grilled hamburger patty from Augie's (mix of ground beef and Montreal smoke meat). I had eggs. Voila. Given all the seasoning in the rice and the meat, it didn't need a gravy. So it was more like fried rice, as I heated it up in a frying pan w/oil. Tasty
