I had extra dough so today I only had to bake corn cherry scones. I’m forever grateful to LapLap for their guidance on making one of my favorite bakery treats, which has also given me the freedom to never initiate a return to bakeries for myself; I just go to them because of my family’s requests.

I had homemade Ensalada Rusa in Spain (tiny town in Segovia province) and I didn’t enjoy it. I still don’t want to try it.

but I did also ponder the potato salad on toast :-)

I love everything else I’ve had in Spain - I’ve spent total 9 weeks there during the 80s & 90s and still love paella so much.

There are as many recipes for Ensalada Rusa in Spain as there are cooks. I am so partial to it that my wedding cake was entirely made of Ensaladilla (made by my mamá), it can be sublime and it can be absolutely vile. It is one of those rare dishes where home cooked isn’t necessarily the best. I was taught by my mother, and the compliment given by Spaniards who taste it is that it is like the ensaladilla from a Bar, in this case, that’s the praise we like to hear.

Paella is another of those dishes that can reach sublime heights or be truly disgusting, I’m glad you felt you were lucky. “Bar Paella” is not a compliment with this kind of dish.




The José Andrés pumpkin soufflé pie thingy was alright. But tasted like so many other Keto desserts. He didn’t say to do it, but my tip is to please grease your ramekin before pouring in and cooking the mixture.

Looked pretty in the ramekin, not so pretty when finally released. Not a problem for me though!

i haven’t eaten since my 10a scones. I’m hungry and trying to avoid getting full before dinner.

However, I tasted some turkey while carving about 5-10 minutes before we started our thanksgiving supper.

Leftovers for lunch - will be more of the same tonight.

Sometime over the next couple of days, I'll boil the carcass and make creamed turkey, which I'll freeze and we'll have over the next couple of months with biscuits and mashed potatoes and with cheese souffles (a la Le Souffle in Paris).

how long does it take you to boil carcass and do you remove final meat remnants first? Now Fred’s carcass and excess meat are in our red retro freezer in 2 WGN bag sets.

My post-costco breakfast:
2 Costco croissants, warmed at 350
some cherry jam
Corn cherry scone
coffee / water

plotted luncheon:
turkey / cranberry on Hawaiian brand rolls (turkey already plated and shrink wrapped to reduce chill)
white rice with turkey & gravy (I’ll search for best way to reheat turkey)
Steamed bbc in sesame oil & rice vinegar
more raw veggies

Probably a couple hours total, usually with some carrots and onions and any leftover gravy, gel and skin. I leave the meat on and then pick it off by hand afterwards (it pretty much falls off the bones by then) to ensure there are no bones or cartilage, etc. in the final product. I then strain the liquid, thicken it and season it and return the meat to the "gravy." I sometimes add some bullion if the poultry flavor isn't strong enough.

This process works well with leftover rotisserie chicken too. If we're going to have a dinner party (remember them?) serving souffles and creamed chicken, I sometimes go to Costco to get a rotisserie chicken for this very purpose.
