I love everything else I’ve had in Spain - I’ve spent total 9 weeks there during the 80s & 90s and still love paella so much.
There are as many recipes for Ensalada Rusa in Spain as there are cooks. I am so partial to it that my wedding cake was entirely made of Ensaladilla (made by my mamá), it can be sublime and it can be absolutely vile. It is one of those rare dishes where home cooked isn’t necessarily the best. I was taught by my mother, and the compliment given by Spaniards who taste it is that it is like the ensaladilla from a Bar, in this case, that’s the praise we like to hear.
Paella is another of those dishes that can reach sublime heights or be truly disgusting, I’m glad you felt you were lucky. “Bar Paella” is not a compliment with this kind of dish.
The José Andrés pumpkin soufflé pie thingy was alright. But tasted like so many other Keto desserts. He didn’t say to do it, but my tip is to please grease your ramekin before pouring in and cooking the mixture.
Looked pretty in the ramekin, not so pretty when finally released. Not a problem for me though!
