I'm on Christmas roast pork duty this year and it's been forever since I did a roast pork so I thought I'd do a trial run. Anyway, here's a pork shoulder with crackling. I left it uncovered in the fridge for 2 days to really dry out the skin, then just before I put it on the bbq added olive oil, salt and some fennel seeds. I Roasted at 280c for 30 minutes then dropped down to 180c until it hit 63 internal. The crackling got a bit burnt so I might try 260 next time or slightly shorten the time at that temp. I also added a bit of cherry wood for smoke.

Illegal to produce or sell, but not illegal to possess or consume. It's not against the law to order it from an out of state seller and delivered in California by a third party such as FedEx or UPS.

It's certainly not illegal in Paris, which is what was being discussed!

Thanks for reminding me - foie gras needs to be added to the Christmas shopping list! Wouldn't be Christmas without it, and wouldn't be foie gras without Sauternes.

For lunch, leftover Portillos chopped salad and a bowl of tomato Parmesan soup, made with leftover parm rinds that I had frozen and a piece of home made garlic crostini. Tasty.

definitely got croissants and pain a chocolat on our first day in paris for our final trip; and Im pretty sure I had foie gras and red table wine for supper. But definitely the bakery visit after we checked into our rental. Sigh so fun

Rather eclectic meal ..
Cottage pie , Hainanese Iberico pork chop with mash , onion / tomato gravy and green salad ( both dishes pre - ordered as modified from menu in restaurant ) , tahu goreng .

Along with a Gunner , Kopi Si Shake ( with a drop of condensed milk but no evaporated , instead lots of fresh milk ) , followed by .. ; iced water with ice always as mentioned in another thread on beverages .

Some attending a Do , have been here

FYI , the nuts are cashew , hazelnut and pistachio . They do look like olives & beans in the photo !

Forgot to mention in earlier post that we also had fruits - longans , persimmons and pineapple - before the cakes .

Bar snack - minute or should one say delicately presented lobster roll on a brioche


Lobster on brioche with lime creme fraiche


Requested the brioche to be already divided when served
Enjoyed with iced alkaline water , iced peach tea .. freshly roasted cashew nuts , spicy almonds .. lychee from iced lychee tea .. bucket ( s ) of ice cubes
