For breakfast I had an omelet (well I tried to make it an omelet) with diced red onions, and diced mushrooms; sliced tomatoes and a couple ounces of lox.

I have real trouble flipping omelets. Often what start out of as omelets end up as scrambles. Who cares though? They taste good either way!
For dinner I sautéed some onions, mushrooms and garlic and then added two big heads of escarole from the farmers market. Then while that cooked down cooked a nice piece of wild king salmon on the George Forman grill. |

It's really simple: Cut in half, add salt liberally on both halves, maybe a pinch of sugar and season with chopped dill, pesto paste or juniper berries etc. Put in fridge with some weight on top. Next day, voila, ready to eat. |
My sister and brother in law popped in unexpectedly to introduce their new puppy to my Tibetan terrier so I ended up making a stack (or 2) of blueberry pancakes.

Lunch
Location: Sintra, Portugal On the plate: fresh octopus in a light olive oil and garlic. With spinach leaves. My first time attempting this meal and I must say I enjoyed it. The texture was not what I expected ... More like chicken compared to the chewy pieces I've had as sushi. The setting was beautiful, weather was slightly overcast but warm and the Sauvignon was chilled. |
Dinner was pizza with the family from a local place. They make a pretty decent pie...for North Carolina.

I usually only cook at home on weekends, those damn 12 hour days make it tough during the week. This morning I made scrambled eggs, with very nice heirloom eggs, sliced tomatoes from the farmers market and nova lox. Got some nice looking broccoli and some cucumbers from the farmers market this morning. Have to figure out how I want to cook them for dinner tonight. Considering sautéed maybe with some mushrooms. Open to suggestions ;)
