The best CO cheeseburger was the 2nd time back from GVA, a great white cheese that was quite good, not a huge fan of the domestic F burger. The salmon was the main dish however, and it bucked the no hot fish on planes trend, surprisingly edible.
At least salmon is a rather 'durable' fish compared to many, I don't think something like trout would go over too well...except on those that really cook the meals in F, which are less and less by the day(if any now?)

The general idea would be easy, making it light weight would be hard, you could use a ball bearing system to load them such that they would stay the same all the time except very extreme situations, but bearings weigh far too much..

Someone on the SkyTeam USA flight ATL-CDG asked for the steak option well-done. FA said if it weren't well done enough, the entree could be put back into the oven. The steak was really very well done :( As I had previously learned the international J lesson with steak, I went with the salmon francaise with crispy garlic and citrus mojo sauce with boniato puree and asparagus

I think DL has done a great job with IFE and WiFi, and implementing those things quickly, and they have some great crews. On the other hand, on shorter hauls out of ATL, I generally encounter some of the grumpiest crews I've seen on any airline, their check-in counters have become utter chaos at nearly every airport. I also find many of their aircraft to have Y cabins that make CO seem comfortable, and nearly every DL itinerary I've flown in the last year has become totally hosed by their constant schedule and equipment changes to the point where it has taken intervention from multiple employees to get a boarding pass. Until DL deals with those issues, I'm done with them. I flew about 15 trips with DL last year, and all but one of them involved a great deal of stress due to not being able to print a boarding pass, total chaos and ridiculously long lines to get checked in or check a bag (consistently far, far worse than other airlines I regularly fly), and things like last minute aircraft swaps that resulted in me being stuck in a middle seat, only to see a standby passenger get my original aisle or window seat when it was still empty just before the door was closed. I'd chalk up a bad experience or two to bad luck, but after experiencing these issues consistently over a period of time, it leaves me with absolutely no desire to give them any of my business. CO and UA are far from perfect, but it's pretty rare I run into the mess with either of those airlines I have run into on a pretty regular basis with DL.

I saw a total of one police officer running traffic enforcement yesterday between IAD and Gatlinburg, TN in the comparative cold but brutal wind. Yes, 475 miles and one traffic cop.
