Does the double stays/points promotion for SPG apply to both points and stays or just one or the other?

I'm seeing a lot of extra points in my account.

Just nights and stays. The extra points are probably related to being Gold, having an SPG AMEX (they post a lot of random bonuses) and signing up for various promos. The description under account activity should help explain some of them... Spending a couple hundred dollars at an SPG property should always yield several thousand points. :)

That's what I thought.

My Gold bonus is separate from my stay, but for my stay points I'm seeing double and sometimes triple the amount I paid for the room.

There are a few granite yards in Paterson that I am going to check out. I honestly have no idea how expensive granite it, but if it is out of my price range I will go with a standard formica counter for now or go with a tiled counter.

Every SPG member earns 2 points per dollar spent, so you should always see (at least) double what you paid at the property. Gold (and Plat) gives you 1 additional point per dollar and your SPG AMEX will give you 2 additional points per dollar. When everything has posted, you should have (at least) 5 points per dollar spent. Obviously, promos will increase this number and/or add another line item of points.

I was thinking of changing my New Years trip (already have airfare) from LAS to somewhere else. However (as part of Operation HHonors Disco Inferno), I found that I could get $50 AmEx checks from them while earning soon-to-be-devalued points and miles for each night while switching hotels. Would it be wrong to Hilton-hop through their BRG as a form of protest while otherwise burning points?

It seems to post a few thousand points (round numbers) at random and be related to the SPG AMEX. I'm certainly not complaining! :)

I like Service Promise postings from my stays at Sheratons. Seems some of the poorly trained staff have no idea how to credit 500 Point Plat amenities and make all sorts of interesting additions to one's SPG account. I've had two such occurrences in the recent past. :D

I am not sure about marble, I am going to have to take a look at some samples in Lowes and Home Depot to get a feel for it. When I think of marble, I think of a gaudy Italian palace in Lodi or Garfield. :p
