As with any airport, things can go awry. But I'd say go for flight 2.
If you're a one-world sapphire, you will have access to the brand new Flagship Lounge in JFK. Drinks are self-serve
In DCA, you should get 2 chits. Enjoy!

Yes.
114 minutes is plenty of time. You'll stay airside after your domestic inbound, so theoretically you can take up to 1.5 hours delay as long as you hoof it.
When you check in at the club you will be given between 0 and 2 drink chits, depending on the agent. You can ask for some if you're not given any (be sure to mention that you are on an international itinerary*).
If they give you only one you may find it easier to use it and then come back for more, rather than ask for the second one straight away - at least in my experience.
*theoretically this should make no difference since you are a non-AA OW sapphire, but I have found this more effective on AC agents who have their routine.
Also given I've never been in one: how does the drinks chit thing work in the Admiral's Clubs? How many do they give you per person, and are you allowed to go back and ask for more? I'm just curious as I've never been in a lounge that restricts beverages in this manner - not saying I will want to drink a lot but having to ask for tickets is a different way of doing things.

I don't think you will get access to the Flagship lounge as a BA Silver, but rather that your original assumption (Gold/First only) applies... sorry.

CMH - JFK (direct) lands at 2:44pm (AA flight, AA metal)
then
JFK - CDG departs at 5:15pm (AA flight, AA metal)
We will have checked bags and these two flights are separate tickets/PNR.
1. Is that enough time between flights, since I assume we will have to claim bags and recheck?
2. Is my assumption in number 1 correct - that CMH agents will not check bags to CDG right?

Assuming flights are on time it should be enough time. If you have pre-check, that will help a lot.

I have had the same thing two times, once it was for 230 minutes and the other was 235 minutes now. Maybe the system gives itself a small buffer.

I assume you know that when this happens, you usually can call AA and have them change your flights, for no charge, to ones that work better for you. That said, I have transferred from JFK to LGA several times this year (flying AUH-JFK/LGA-BOS), and routinely make the transfer in around 75 minutes from when the door opens at JFK until when I'm through security and at the gate at LGA; actual travel time in the taxi/uber has been less than 30 minutes each time. (Note, however, that AUH is a pre-clearance station so I do not have to clear immigration and customs upon arrival, and I have traveled without checked luggage.) In my case, the 240-minute minimum connection time requires me to book a 260-minute connection (9:40am scheduled arrival at JFK; 2:00pm scheduled departure at LGA), but I routinely make it to LGA by 11:00am and easily make a 12:00pm departure (and would make an 11:00am departure if AA didn't routinely close the doors of its LGA-BOS shuttle flights 10 minutes prior to schedule departure time).
