The licensing is a good question, so I also did some digging.
Oddly, American doesn't have an active one for the AC @ SFO either, but they are definitely serving liquor there. I wonder if the license is under a sub-contractor, much like the relationship between UA and Sodexo.

The UA licenses are similarly owned by UA, and not by Sodexo. Hopefully the process of getting a license at SFO is faster than the process of getting one in the city!

Looks like we have a date for the opening of the lounge.
A new Alaska Lounge is coming to San Francisco.
We’re excited to announce a new Lounge in SFO opening August 31, 2021. This highly anticipated location has over 9,000 square feet of space and includes all your favorite Alaska Lounge features, giving you another convenient location to relax and recharge during travels.

Waiting in anticipation to see if they'll take Priority Pass (though my 8 75K guest passes will cover me for a while if they don't). I won't be there on 8/31 as I'm in HEL, but hope to pop in when I arrive home on Sept 3.

I don't recall any such thing for N and SEA flyers, but maybe I'm wrong?

Seen at SFO this week. Note that the "date posted" is 7/21. They're not going to get a license until 8/20 at the absolute earliest (30 days), and it often takes much longer than that (especially since the CA ABC website says there's a form 220 hold, meaning an ongoing investigation). They might need to open on 8/31 without alcohol at the bar.
