Note: Chart only allows contiguous US and Alaska as "USA", however, AS connecting flights to Hawaii/Canada/Mexico are allowed. No chart for USA-Europe (though in theory you could redeem SIN-USA or USA-SIN routing on SQ onestops involving Europe and get off the plane in FRA/MAN, pretty high price in miles though). Stopover in SIN not allowed on regional awards (Intra-Asia,including South Pacific) not touching US.
"North Asia" includes China (PEK/PVG) as per latest update by AS. South Pacific is Australia/New Zealand

I assume you mean in premium cabins, which is true, but they had been available for some routes (I booked a SIN/AKL F award). However, they were available previously intra-Asia so we will just have to wait and see if anything materialises.

Pre-pandemic they were widely available on AS (and other carriers as well, though only rarely on UA). Slightly higher price than KF, but you did not have to deal with SQ to change or cancel, which is a huge plus because SQ can be very difficult to deal with.

I booked 2x business class on JFK-SIN non-stop in September just the other day. Availability matched what SQ website shows for "saver" level awards. I replaced reservations that I had on CX because I have no confidence that Cathay/Hong Kong SAR will get their act together by September. It was 2x the price, but there is no better way to travel to SIN from New York in my opinion.

Also to keep in mind that JFK is currently scheduled until end of Oct. After that, only EWR is available, unless they decide to extend JFK. YVR also ends in Oct.

Apologies if this has been brought up before, but do I need to call the call center to book multi-city awards (i.e a one-way with a stopover in Singapore) on Singapore Airlines? I'm able to find availability on each leg when using the search engine but it zeroes out whenever I select multi-city.
