DP as it is affectionately known, is named after the Benedictine monk who pioneered many of the techniques used in Champagne today. Dom Perignon is always from a single vintage and always a blend of Chardonnay and Pinot Noir grapes. The current Chef de Cave is the highly talented and respected Richard Geoffroy. 2009 was not without its challenges but was a warmer vintage overall producing a wine that is generous yet shows DP's legendary elegance and finesse. Delicious! 2007 Taittinger Comtes de Champagne Blanc de Blancs, Champagne, France Family-owned for almost a century, Taittinger is one of the greatest independent Houses and Comtes de Champagne is their highly respected and revered prestige cuvee. Comtes de Champagne is made from 100% Chardonnay from Grand Cru villages in the Cote des Blancs - Avize, Cramant, Chouilly, Mestil-sur-Oger and Oger. This is a brilliant champagne and a textbook example of Blancs de Blancs at its best, displaying great intensity and acid line, with complex and classic toasty notes from over 10 years of aging in bottle. Spectacular! White Wine 2017 Domaine Laroche Chablis 1er Cru "Beauroys", Burgundy, France Headquartered in L'Obediencerie, a former monastery in the village of Chablis in which monks had made wines from the ninth century, Domaine Laroche is directly linked to the history of the region. Winemaker Gregory Viennois works in tune with nature, encouraging low yields and natural ecology to produce fruit that is true to individual vineyard origins. The vineyard of Les Beauroys bloom on the Kimmeridgian limestone foothills which give Chablis' minerality to the wine but also a fresh richness. The nose and palate reveals notes of star anise and spice, with a subtle, salty finish. 2016 Gustave Lorentz Riesling Grand Cru Altenberg de Bergheim, Alsace, France Wine regions are often intensely beautiful, but there are few to compare with Alsace in north-eastern France. Tiny villages that appear unchanged for a thousand years cling to slopes that delve in and out of valleys and clefts in the sombre, wooded Vosges mountains. On these sunny slopes are some of France's greatest Grand Cru vineyards. The Altenberg vineyard at Bergheim, now organically cultivated, has been Grand Cru since the 12th Century, and the Lorentz family have farmed it for 7 generations. Their Riesling is from old vines and is gloriously dry, with the quivering acid freshness of honeycomb and the dusty golden warmth of a barley field at harvest time. Red Wine 2014 Albert Bichot, Morey-Saint-Denis 1èr Cru "Les Sorbets", Burgundy, France Morey-Saint-Denis is located in the Cote de Nuits, between Gevrey-Chambertin to the north and Cambolle-Musigny to the south. Almost all of Morey-Sant-Denis's vines produce red Pinot Noirs. "Les Sorbets" lies at an altitude of 250 metres. The soil is brown and clayey overlying hard Bathonian limestone and contains Upper Bajocian marls and stony scree. The name "Les Sorbets" refers to the rowan trees (sorbiers) that were commonly found here. The trees are appreciated for their orange berries, flowers and wood. On the nose, the wine is redolent of wild sour cherry with notes of leather and a hint of oak. It acquires more complex aromas with animal and spicy nuances when allowed to age. Well balanced on the palate and endowed with superb structure boasting flavours of red berries and liquorice. The finish is generous and deliciously fruity. 2007 Chateau Leoville-Poyferre, Saint-Julien, Bordeaux, France This splendid estate covering 80 hectares of vines in the best part of the Medoc was named a Second Growth in 1855 and has retained this high status ever since. Cabernet Sauvignon, Merlot, Petit Verdot and Cabernet France are harvested at their peak of ripeness to make this classic Saint-Julien wine which has been described as "quintessential claret". Carmine-ruby in colour, with fragrantly intense aromas of red and black berries, this rich combination of fruit on the palate is balanced by an elegantly firm finish. 2007 is a vintage that is recognised for its charm and is eminently suitable for red meats and perfect with cheese. 2016 Clonakilla O'Riada Shiraz, Canberra District, Australia The climate in Canberra is cool and in stark contrast to many other Australian wine regions. Not surprisingly, Shiraz grown here is very different to the wines from warmer regions - medium-bodied and perfumed rather than rich and powerful. Clonakilla is a small family owned winery established in 1971 that has developed an extraordinary reputation for distinctive high quality wines under the guidance of winemaker Tim Kirk. A deep thinker, Kirk is certainly one of the winemaking stars of his generation. Very much in the modern style, this wine has vibrant pepper-spice characters, good acidity and fruit brightness. A quintessential "cool climate" Shiraz. OR 2015 Sons of Eden "Remus" Shiraz, Eden Valley, Australia Eden Valley, whilst technically part of the Barossa region, forms the higher and cooler section to the east. The red wines here are generally medium-bodied and restrained, rather than ripe and full. Shiraz performs exceptionally well in this region. Sons of Eden was founded in 2000 and is a partnership between viticulturist Simon Cowham and winemaker Cory Ryan. Together, they have forged an excellent reputation as a producer of high quality, small batch, carefully-crafted wines made from sustainable vineyards. A medium-bodied red showing typical Eden Valley elegance, spiced plum characters, and softness. Port Dow's 20 Year Old Port, Douro, Portugal With twenty years of cask aging, this Port has acquired a gorgeous aroma of dried flowers, toffee, sweet spices and dried figs. The tannins have softened and evolved into a silky texture with subtle, layered flavours that are persistent on the finish. A beautifully balanced Port that can be enjoyed on its own or with cheese or dessert.
