2009/2008 Dom Perignon, Champagne, France
Champagne, with its famous limestone soils and cold climate, makes the world's greatest sparkling wines and the most famous of them all is Dom Perignon. DP as it is affectionately known, is named after the Benedictine monk who pioneered many of the techniques used in Champagne today. Dom Perignon is always from a single vintage and always a blend of Chardonnay and Pinot Noir grapes. The current Chef de Cave is the highly talented and respected Richard Geoffroy. 2009 was not without its challenges but was a warmer vintage overall producing a wine that is generous yet shows DP's legendary elegance and finesse. Delicious!

2007 Taittinger Comtes de Champagne Blanc de Blancs, Champagne, France
Family-owned for almost a century, Taittinger is one of the greatest independent Houses and Comtes de Champagne is their highly respected and revered prestige cuvee. Comtes de Champagne is made from 100% Chardonnay from Grand Cru villages in the Cote des Blancs - Avize, Cramant, Chouilly, Mestil-sur-Oger and Oger. This is a brilliant champagne and a textbook example of Blancs de Blancs at its best, displaying great intensity and acid line, with complex and classic toasty notes from over 10 years of aging in bottle. Spectacular!

White Wine

2017 Domaine Laroche Chablis 1er Cru "Beauroys", Burgundy, France
Headquartered in L'Obediencerie, a former monastery in the village of Chablis in which monks had made wines from the ninth century, Domaine Laroche is directly linked to the history of the region. Winemaker Gregory Viennois works in tune with nature, encouraging low yields and natural ecology to produce fruit that is true to individual vineyard origins. The vineyard of Les Beauroys bloom on the Kimmeridgian limestone foothills which give Chablis' minerality to the wine but also a fresh richness. The nose and palate reveals notes of star anise and spice, with a subtle, salty finish.

2016 Gustave Lorentz Riesling Grand Cru Altenberg de Bergheim, Alsace, France
Wine regions are often intensely beautiful, but there are few to compare with Alsace in north-eastern France. Tiny villages that appear unchanged for a thousand years cling to slopes that delve in and out of valleys and clefts in the sombre, wooded Vosges mountains. On these sunny slopes are some of France's greatest Grand Cru vineyards. The Altenberg vineyard at Bergheim, now organically cultivated, has been Grand Cru since the 12th Century, and the Lorentz family have farmed it for 7 generations. Their Riesling is from old vines and is gloriously dry, with the quivering acid freshness of honeycomb and the dusty golden warmth of a barley field at harvest time.

Red Wine

2015 Paringa Estate Pinot Noir, Mornington Peninsula, Australia
The Mornington Peninsula, southeast of Melbourne, is surrounded on three sides by water. The region's cool maritime climate is particularly well suited to the production of top quality Pinot Noir which is very much a local specialty. The region's biennial International Pinot Noir Event is a must for any keen wine traveller. Established by the winemaker Lindsay McCall in 1985, Paringa Estate is now considered to be one of Australia's most consistent and best Pinot Noir makers. This wine combines Pinot fruit purity with savoury notes, and lightness with power. A top example of this exciting grape variety and region.

2007 Chateau Leoville-Poyferre, Saint-Julien, Bordeaux, France
This splendid estate covering 80 hectares of vines in the best part of the Medoc was named a Second Growth in 1855 and has retained this high status ever since. Cabernet Sauvignon, Merlot, Petit Verdot and Cabernet France are harvested at their peak of ripeness to make this classic Saint-Julien wine which has been described as "quintessential claret". Carmine-ruby in colour, with fragrantly intense aromas of red and black berries, this rich combination of fruit on the palate is balanced by an elegantly firm finish. 2007 is a vintage that is recognised for its charm and is eminently suitable for red meats and perfect with cheese.

2016 Clonakilla O'Riada Shiraz, Canberra District, Australia
The climate in Canberra is cool and in stark contrast to many other Australian wine regions. Not surprisingly, Shiraz grown here is very different to the wines from warmer regions - medium-bodied and perfumed rather than rich and powerful. Clonakilla is a small family owned winery established in 1971 that has developed an extraordinary reputation for distinctive high quality wines under the guidance of winemaker Tim Kirk. A deep thinker, Kirk is certainly one of the winemaking stars of his generation. Very much in the modern style, this wine has vibrant pepper-spice characters, good acidity and fruit brightness. A quintessential "cool climate" Shiraz.

2015 Sons of Eden "Remus" Shiraz, Eden Valley, Australia
Eden Valley, whilst technically part of the Barossa region, forms the higher and cooler section to the east. The red wines here are generally medium-bodied and restrained, rather than ripe and full. Shiraz performs exceptionally well in this region. Sons of Eden was founded in 2000 and is a partnership between viticulturist Simon Cowham and winemaker Cory Ryan. Together, they have forged an excellent reputation as a producer of high quality, small batch, carefully-crafted wines made from sustainable vineyards. A medium-bodied red showing typical Eden Valley elegance, spiced plum characters, and softness.

Port

Dow's 20 Year Old Port, Douro, Portugal
With twenty years of cask aging, this Port has acquired a gorgeous aroma of dried flowers, toffee, sweet spices and dried figs. The tannins have softened and evolved into a silky texture with subtle, layered flavours that are persistent on the finish. A beautifully balanced Port that can be enjoyed on its own or with cheese or dessert.

Champagne has no peer and Krug is undisputedly one of its greatest names. Founded in 1843 by Joesph Krug, the wines of Krug are seen by many as the ultimate expression of Champagne - effortlessly combining power and intensity with finesse, length and balance. In addition to Chardonnay and Pinot Noi, Krug famously includes a higher percentage of Pinot Meunier in their blends than most other prestige cuvees. Vintage Krug not only reflects the House style but also the character of a specific year and 2004 was an exceptional vintage. A rare champagne of extraordinary quality which has benefited from over 12 years of maturation in the cool cellars of Reims.

2017 Bouchard Pere & Fils Meursault 1er Cru "Genevrieres", Burgundy, France
Meursault, despite its small size, is one of the most highly regarded communes in Burgundy enjoying a global reputation for producing some of the most hedonistic white wines made solely from Chardonnay grapes. In recent years, Meursault wines have gone beyond its traditional reputation for creamy, buttery wines to a style that focuses more on minerality and tension. In the hands of Bouchard, the Meursault Genevrieres, considered grand cru level by many critics, is lacy and elegant with layers of jasmine flowers, white peaches, mineral and crushed stones. Bouchard is one of the oldest producers in Burgundy, founded in 1731, farming 130 hectares of their own vineyards.

Red Wine

2012 Domaine Faively Latricieres-Chambertin Grand Cru, Burgundy, France
Founded in 1825, Domaine Faiveley is one of the most respected domains in Burgundy, with 127 hectares of vineyards, 13 of which are Grand Cru. Since Erwan Faiveley, the 7th generation of the family, took the helm at the winery, their holdings have grown as well as the wine's quality and reputation. Faiveley farms just over one hectare in Latricieres-Chambertin and this intense, powerful red wine is a great example of Faiveley's ability to balance depth and concentration with lovely fruit and approachability. The mature vines in this limestone-filled vineyard range from 30 to 60 years old. The 60% new oak used is beautifully integrated, offering plenty of ripe dark berries and spices with a lingering finish.

2009/2008 Dom Perignon, Champagne, France
Champagne, with its famous limestone soils and cold climate, makes the world's greatest sparkling wines and the most famous of them all is Dom Perignon. DP as it is affectionately known, is named after the Benedictine monk who pioneered many of the techniques used in Champagne today. Dom Perignon is always from a single vintage and always a blend of Chardonnay and Pinot Noir grapes. The current Chef de Cave is the highly talented and respected Richard Geoffroy. 2009 was not without its challenges but was a warmer vintage overall producing a wine that is generous yet shows DP's legendary elegance and finesse. Delicious!

2004 Krug, Chamgagne, France
Champagne has no peer and Krug is undisputedly one of its greatest names. Founded in 1843 by Joesph Krug, the wines of Krug are seen by many as the ultimate expression of Champagne - effortlessly combining power and intensity with finesse, length and balance. In addition to Chardonnay and Pinot Noi, Krug famously includes a higher percentage of Pinot Meunier in their blends than most other prestige cuvees. Vintage Krug not only reflects the House style but also the character of a specific year and 2004 was an exceptional vintage. A rare champagne of extraordinary quality which has benefited from over 12 years of maturation in the cool cellars of Reims.

White Wine

2016 Gustave Lorentz Riesling Grand Cru Altenberg de Bergheim, Alsace, France
Wine regions are often intensely beautiful, but there are few to compare with Alsace in north-eastern France. Tiny villages that appear unchanged for a thousand years cling to slopes that delve in and out of valleys and clefts in the sombre, wooded Vosges mountains. On these sunny slopes are some of France's greatest Grand Cru vineyards. The Altenberg vineyard at Bergheim, now organically cultivated, has been Grand Cru since the 12th Century, and the Lorentz family have farmed it for 7 generations. Their Riesling is from old vines and is gloriously dry, with the quivering acid freshness of lemon pith and lime zest, all wrapped in the richness of honeycomb and the dusty golden warmth of a barley field at harvest time.

2017 Bouchard Pere & Fils Meursault 1er Cru "Genevrieres", Burgundy, France
Meursault, despite its small size, is one of the most highly regarded communes in Burgundy enjoying a global reputation for producing some of the most hedonistic white wines made solely from Chardonnay grapes. In recent years, Meursault wines have gone beyond its traditional reputation for creamy, buttery wines to a style that focuses more on minerality and tension. In the hands of Bouchard, the Meursault Genevrieres, considered grand cru level by many critics, is lacy and elegant with layers of jasmine flowers, white peaches, mineral and crushed stones. Bouchard is one of the oldest producers in Burgundy, founded in 1731, farming 130 hectares of their own vineyards.

Red Wine

2012 Domaine Faively Latricieres-Chambertin Grand Cru, Burgundy, France
Founded in 1825, Domaine Faiveley is one of the most respected domains in Burgundy, with 127 hectares of vineyards, 13 of which are Grand Cru. Since Erwan Faiveley, the 7th generation of the family, took the helm at the winery, their holdings have grown as well as the wine's quality and reputation. Faiveley farms just over one hectare in Latricieres-Chambertin and this intense, powerful red wine is a great example of Faiveley's ability to balance depth and concentration with lovely fruit and approachability. The mature vines in this limestone-filled vineyard range from 30 to 60 years old. The 60% new oak used is beautifully integrated, offering plenty of ripe dark berries and spices with a lingering finish.

2015 Sons of Eden "Remus" Shiraz, Eden Valley, Australia
Eden Valley, whilst technically part of the Barossa region, forms the higher and cooler section to the east. The red wines here are generally medium-bodied and restrained, rather than ripe and full. Shiraz performs exceptionally well in this region. Sons of Eden was founded in 2000 and is a partnership between viticulturist Simon Cowham and winemaker Cory Ryan. Together, they have forged an excellent reputation as a producer of high quality, small batch, carefully-crafted wines made from sustainable vineyards. A medium-bodied red showing typical Eden Valley elegance, spiced plum characters, and softness.

2007 Chateau Leoville-Poyferre, Saint-Julien, Bordeaux, France
This splendid estate covering 80 hectares of vines in the best part of the Medoc was named a Second Growth in 1855 and has retained this high status ever since. Cabernet Sauvignon, Merlot, Petit Verdot and Cabernet Franc are harvested at their peak of ripeness to make this classic Saint-Julien wine which has been described as a "quintessential claret". Carmine-ruby in colour, with fragrantly intense aromas of red and black berries, this rich combination of fruit on the palate is balanced by an elegantly firm finish. 2007 is a vintage that is recognized for its charm and is eminently suitable for red meats and perfect with cheese.

With twenty years of cask aging, this Port has acquired a gorgeous aroma of dried flowers, toffee, sweet spices and dried figs. The tannins have softened and evolved into a silky texture with subtle, layered flavours that are persistent on the finish. Headquartered in L'Obediencerie, a former monastery in the village of Chablis in which monks had made wines from the ninth century, Domaine Laroche is directly linked to the history of the region. Winemaker Gregory Viennois works in tune with nature, encouraging low yields and natural ecology to produce fruit that is true to individual vineyard origins. The vineyard of Les Beauroys bloom on the Kimmeridgian limestone foothills which give Chablis' minerality to the wine but also a fresh richness. The nose and palate reveals notes of star anise and spice, with a subtle, salty finish.

2016 Gustave Lorentz Riesling Grand Cru Altenberg de Bergheim, Alsace, France
Wine regions are often intensely beautiful, but there are few to compare with Alsace in north-eastern France. Tiny villages that appear unchanged for a thousand years cling to slopes that delve in and out of valleys and clefts in the sombre, wooded Vosges mountains. On these sunny slopes are some of France's greatest Grand Cru vineyards. The Altenberg vineyard at Bergheim, now organically cultivated, has been Grand Cru since the 12th Century, and the Lorentz family have farmed it for 7 generations. The climate in Canberra is cool and in stark contrast to many other Australian wine regions. Not surprisingly, Shiraz grown here is very different to the wines from warmer regions - medium-bodied and perfumed rather than rich and powerful. Clonakilla is a small family owned winery established in 1971 that has developed an extraordinary reputation for distinctive high quality wines under the guidance of winemaker Tim Kirk. A deep thinker, Kirk is certainly one of the winemaking stars of his generation. Very much in the modern style, this wine has vibrant pepper-spice characters, good acidity and fruit brightness. A quintessential "cool climate" Shiraz.

2014 Albert Bichot, Morey-Saint-Denis 1èr Cru "Les Sorbets", Burgundy, France
Morey-Saint-Denis is located in the Cote de Nuits, between Gevrey-Chambertin to the north and Cambolle-Musigny to the south. Almost all of Morey-Sant-Denis's vines produce red Pinot Noirs. "Les Sorbets" lies at an altitude of 250 metres. The soil is brown and clayey overlying hard Bathonian limestone and contains Upper Bajocian marls and stony scree. The name "Les Sorbets" refers to the rowan trees (sorbiers) that were commonly found here. The trees are appreciated for their orange berries, flowers and wood. On the nose, the wine is redolent of wild sour cherry with notes of leather and a hint of oak. It acquires more complex aromas with animal and spicy nuances when allowed to age. Well balanced on the palate and endowed with superb structure boasting flavours of red berries and liquorice. The finish is generous and deliciously fruity.

2009/2008 Dom Perignon, Champagne, France
Champagne, with its famous limestone soils and cold climate, makes the world's greatest sparkling wines and the most famous of them all is Dom Perignon. DP as it is affectionately known, is named after the Benedictine monk who pioneered many of the techniques used in Champagne today. Dom Perignon is always from a single vintage and always a blend of Chardonnay and Pinot Noir grapes. The current Chef de Cave is the highly talented and respected Richard Geoffroy. 2009 was not without its challenges but was a warmer vintage overall producing a wine that is generous yet shows DP's legendary elegance and finesse. Delicious!

2004 Krug, Chamgagne, France
Champagne has no peer and Krug is undisputedly one of its greatest names. Founded in 1843 by Joesph Krug, the wines of Krug are seen by many as the ultimate expression of Champagne - effortlessly combining power and intensity with finesse, length and balance. In addition to Chardonnay and Pinot Noi, Krug famously includes a higher percentage of Pinot Meunier in their blends than most other prestige cuvees. Vintage Krug not only reflects the House style but also the character of a specific year and 2004 was an exceptional vintage. A rare champagne of extraordinary quality which has benefited from over 12 years of maturation in the cool cellars of Reims.

White Wine

2017 Domaine de Montille Puligny-Montrachet 1er Cru "Les Chalumeaux", Burgundy, France
Domaine de Montille is a leading family estate making impressive red and white wines with 37 hectares spread across the Cote d'Or, with the majority of its holdings in the Cote de Beaune. Since 1995, when Etienne de Montille took over from his highly-respected father Hubert, the wines have become even finer and more precise. Farming has also been fully biodynamic and organic since then. "Les Chalumeaux" is a special Premier Cru vineyard in Puligny-Montrachet and de Montille owns a tiny parcel of just 0.3 hectares. In 2017, the entire production of Chalumeaux was allocated to Singapore Airlines and we are thrilled to have the exclusivity of featuring this beautiful wine that possesses intensity, as well as grace and delicacy.

2016 Gustave Lorentz Riesling Grand Cru Altenberg de Bergheim, Alsace, France
Wine regions are often intensely beautiful, but there are few to compare with Alsace in north-eastern France. Tiny villages that appear unchanged for a thousand years cling to slopes that delve in and out of valleys and clefts in the sombre, wooded Vosges mountains. On these sunny slopes are some of France's greatest Grand Cru vineyards. The Altenberg vineyard at Bergheim, now organically cultivated, has been Grand Cru since the 12th Century, and the Lorentz family have farmed it for 7 generations. Their Riesling is from old vines and is gloriously dry, with the quivering acid freshness of lemon pith and lime zest, all wrapped in the richness of honeycomb and the dusty golden warmth of a barley field at harvest time.

Red Wine

2007 Chateau Leoville-Poyferre, Saint-Julien, Bordeaux, France
This splendid estate covering 80 hectares of vines in the best part of the Medoc was named a Second Growth in 1855 and has retained this high status ever since. Cabernet Sauvignon, Merlot, Petit Verdot and Cabernet Franc are harvested at their peak of ripeness to make this classic Saint-Julien wine which has been described as a "quintessential claret". Carmine-ruby in colour, with fragrantly intense aromas of red and black berries, this rich combination of fruit on the palate is balanced by an elegantly firm finish. 2007 is a vintage that is recognized for its charm and is eminently suitable for red meats and perfect with cheese.

2016 Albert Bichot Corton Grand Cru, Burgundy, France
The first traces of the Bichot family date back to 1214 -- the family's coat of arms has not changed since not has its symbol, a doe (biche). Albert Bichot joined the company in the 90s. He is convinced that good quality wine depends on good quality grapes. This Corton Grand Cru is grown on a vineyard with brown limestone soil overlying very clayey scree in the Cote de Beaune area. 100% pinot noir grapes are handpicked and aged in 100% oak barrels. These carefully controlled steps result in a truly quality wine with a subtle mix of smokey notes and spicy aromas with a light touch of liquorice on the nose. Fine and elegant, this robust wine also has a supple structure with harmonious tannins which give way to a long finish intensively flavoured by fruity notes.

2013 Pieropan Amarone della Valpolicella DOCG, Veneto, Italy
Anyone who enjoys full bodied, generous reds with richness and jammy fruits will love this Amarone. Its fruitiness and lush texture is well supported by firm acidity and structured tannins. The palate is powerful and intense, filled with dark chocolate and dried prunes. Amarone is a fairly new addition to the Pieropan family, best known for making top quality white wines from the neighbouring Soave region. In their signature style, they combine intensity, depth and structure in this delicious, opulent Amarone that is best with strong sauce-based dishes and robust meat-based dishes.

Dow's 20 Year Old Port, Douro, Portugal
With twenty years of cask aging, this Port has acquired a gorgeous aroma of dried flowers, toffee, sweet spices and dried figs. The tannins have softened and evolved into a silky texture with subtle, layered flavours that are persistent on the finish. A beautifully balanced Port that can be enjoyed on its own or with cheese or dessert.

This splendid estate covering 80 hectares of vines in the best part of the Medoc was named a Second Growth in 1855 and has retained this high status ever since. Cabernet Sauvignon, Merlot, Petit Verdot and Cabernet Franc are harvested at their peak of ripeness to make this classic Saint-Julien wine which has been described as a "quintessential claret". Carmine-ruby in colour, with fragrantly intense aromas of red and black berries, this rich combination of fruit on the palate is balanced by an elegantly firm finish. 2007 is a vintage that is recognized for its charm and is eminently suitable for red meats and perfect with cheese.

2016 Albert Bichot Corton Grand Cru, Burgundy, France
The first traces of the Bichot family date back to 1214 -- the family's coat of arms has not changed since not has its symbol, a doe (biche). Albert Bichot joined the company in the 90s. He is convinced that good quality wine depends on good quality grapes. This Corton Grand Cru is grown on a vineyard with brown limestone soil overlying very clayey scree in the Cote de Beaune area. 100% pinot noir grapes are handpicked and aged in 100% oak barrels. These carefully controlled steps result in a truly quality wine with a subtle mix of smokey notes and spicy aromas with a light touch of liquorice on the nose. Fine and elegant, this robust wine also has a supple structure with harmonious tannins which give way to a long finish intensively flavoured by fruity notes.

2013 Pieropan Amarone della Valpolicella DOCG, Veneto, Italy
Anyone who enjoys full bodied, generous reds with richness and jammy fruits will love this Amarone. Its fruitiness and lush texture is well supported by firm acidity and structured tannins. The palate is powerful and intense, filled with dark chocolate and dried prunes. Amarone is a fairly new addition to the Pieropan family, best known for making top quality white wines from the neighbouring Soave region. In their signature style, they combine intensity, depth and structure in this delicious, opulent Amarone that is best with strong sauce-based dishes and robust meat-based dishes.

Champagne, with its famous limestone soils and cold climate, makes the world's greatest sparkling wines and the most famous of them all is Dom Perignon. DP as it is affectionately known, is named after the Benedictine monk who pioneered many of the techniques used in Champagne today. Dom Perignon is always from a single vintage and always a blend of Chardonnay and Pinot Noir grapes. The current Chef de Cave is the highly talented and respected Richard Geoffroy. 2009 was not without its challenges but was a warmer vintage overall producing a wine that is generous yet shows DP's legendary elegance and finesse. Delicious!

Family-owned for almost a century, Taittinger is one of the greatest independent Houses and Comtes de Champagne is their highly respected and revered prestige cuvee. Comtes de Champagne is made from 100% Chardonnay from Grand Cru villages in the Cote des Blancs - Avize, Cramant, Chouilly, Mestil-sur-Oger and Oger. This is a brilliant champagne and a textbook example of Blancs de Blancs at its best, displaying great intensity and acid line, with complex and classic toasty notes from over 10 years of aging in bottle. Spectacular!

2017 Domaine Laroche Chablis 1er Cru "Beauroys", Burgundy, France
Headquartered in L'Obediencerie, a former monastery in the village of Chablis in which monks had made wines from the ninth century, Domaine Laroche is directly linked to the history of the region. Winemaker Gregory Viennois works in tune with nature, encouraging low yields and natural ecology to produce fruit that is true to individual vineyard origins. The vineyard of Les Beauroys bloom on the Kimmeridgian limestone foothills which give Chablis' minerality to the wine but also a fresh richness. The nose and palate reveals notes of star anise and spice, with a subtle, salty finish.

2014 Albert Bichot, Morey-Saint-Denis 1èr Cru "Les Sorbets", Burgundy, France
Morey-Saint-Denis is located in the Cote de Nuits, between Gevrey-Chambertin to the north and Cambolle-Musigny to the south. Almost all of Morey-Sant-Denis's vines produce red Pinot Noirs. "Les Sorbets" lies at an altitude of 250 metres. The soil is brown and clayey overlying hard Bathonian limestone and contains Upper Bajocian marls and stony scree. The name "Les Sorbets" refers to the rowan trees (sorbiers) that were commonly found here. The trees are appreciated for their orange berries, flowers and wood. On the nose, the wine is redolent of wild sour cherry with notes of leather and a hint of oak. It acquires more complex aromas with animal and spicy nuances when allowed to age. Well balanced on the palate and endowed with superb structure boasting flavours of red berries and liquorice. The finish is generous and deliciously fruity.

2016 Clonakilla O'Riada Shiraz, Canberra District, Australia
The climate in Canberra is cool and in stark contrast to many other Australian wine regions. Not surprisingly, Shiraz grown here is very different to the wines from warmer regions - medium-bodied and perfumed rather than rich and powerful. Clonakilla is a small family owned winery established in 1971 that has developed an extraordinary reputation for distinctive high quality wines under the guidance of winemaker Tim Kirk. A deep thinker, Kirk is certainly one of the winemaking stars of his generation. Very much in the modern style, this wine has vibrant pepper-spice characters, good acidity and fruit brightness. A quintessential "cool climate" Shiraz.

Eden Valley, whilst technically part of the Barossa region, forms the higher and cooler section to the east. The red wines here are generally medium-bodied and restrained, rather than ripe and full. Shiraz performs exceptionally well in this region. Sons of Eden was founded in 2000 and is a partnership between viticulturist Simon Cowham and winemaker Cory Ryan. Together, they have forged an excellent reputation as a producer of high quality, small batch, carefully-crafted wines made from sustainable vineyards. A medium-bodied red showing typical Eden Valley elegance, spiced plum characters, and softness.
