Amex Gold and Platinum exist in every single market where Amex operates. No chance they will ever discontinue it.
Remove the low value customers ($500 annual spend) and pushing hard for new markets is where they are going.
They are pushing it extremely hard to CPAs, with advertisements and sponsorships all over the place, plus a preferred rate of $99 annual fee after the first year. They want people to be using the card, not churning the card.
Even with the additional competition in the US, Amex moved to a one signup per lifetime policy. Low value customers are exactly that.

If Amex manages to rid itself of the small percentage of cardholders who are just looking for signup bonuses or referrals, they'll do just fine. Churners do not dictate the market.

Sorry but the only reason I use amex is because of the bonuses. The acceptance isn't great, so if they don't have that... Why would I want to bother

It's very easy to get approved for an amex...if amex only cared about those putting 40k+ on the card they wouldn't be approving students or people with really low incomes... So I'd say you are wrong on that

I don't know much about ApplePay but it's an RFID/contactless type system. I can count with my fingers how many times I've been able to just "tap" with my Amex. Even the Petro Canada pumps wasn't reliable as I had to get back in the car to move pumps after trying to tap my Gold card once. It froze the pump's CC system apparently.
