I think someone else would be better placed to give you a definite answer, but my reading is that it is where you board the flight from, not your nationality that counts.

US citizen flying from the LAX to Dubai this week on LH, and then returning first week of December direct on EK.
Even though the US doesn't need a neg covid test for entry, I assume I'll need one flying EK?
Any tips for the most convenient way of obtaining a test in Dubai?
Booked in J through Alaska Mileage Plan.

But if you do wish to avail of one before travel, EK have discounted rates with several test centres in Dubai. The test can even be done at your hotel as they will send someone out to take the sample.
Emirates has expanded its medical partnerships to offer all passengers exclusive home or office COVID‑19 PCR testing rates at the following centres:
Al Tadawi Medical Centre
Located at Al Masood building, Airport Road, Port Saeed area, Deira.
The test costs AED 130 per person. Home or office testing within Dubai costs AED 240 per person. Test results will be available within 24 hours.
Prime Medical Centres
Locations in Dubai:
Al Qusais Branch, Damascus Street
Premier Diagnostic & Medical Center, Salah Al Din Street
Prime Corp Medical Center, Salah Al Din Street, Deira.

Present a valid ticket or boarding pass (with a departure date within one month of the test date) and ID to take the COVID‑19 PCR test at these rates.
You must take the test within the period required by your destination and Emirates will not be responsible if the test results are not released in time for travel. Not sure why I thought a covid test was a blanket requirement for flying EK.

Emirates extends free insurance to cover passengers if trips get cancelled due to Covid-19 - the new policy will automatically apply to all Emirates tickets purchased from 1 December 2020.
Emirates customers will be covered when they fly to any destination, in any class of travel. This extends to Emirates codeshare flights operated by partner airlines, as long as the ticket number starts with 176. Customers do not have to fill in any forms or register before they travel.
Highlights of the new cover include out-of-country emergency medical expenses and emergency medical evacuation of up to $500,000. This is valid for Covid-19 cases, if the virus is contracted during the trip, as well as other medical emergencies.
Also included is up to $7,500 of trip cancellation cover for non-refundable costs, if the traveller or a relative (as defined in the policy) is unable to travel because they are diagnosed with Covid-19 before the scheduled departure date, or for other specified reasons.
There is also trip curtailment cover of up to $7,500 for non-refundable trip costs and additional costs for passengers to return to their country of residence, if they or a relative contracts Covid-19 or any other critical illness while abroad.

Wanted to provide an update
Was given three separate health declaration forms on my LH flight and one of them asked if I had health insurance
Dubai immigration didn't even look at these forms, let alone collect them. They only glanced at my covid test and handed it back to me.
