A friend gave me lots of lemons from her tree. Earlier I made limoncello.
Dinner:
Romaine salad with lemon vingagrette. Risotto with lemony broth, jumbo shrimp, basil, asparagus, and artichoke hearts.

Hmmm, we're overflowing with Meyer lemons from our backyard tree. I was thinking lemon curd, but limoncello would be far more interesting.

Turkey tacos with fixings yesterday plus the Doubletree cookie recipe for dessert. They’re really good cookies - not sure if it’s the lemon and oats. They didn’t feel that sweet.

Why not do both!! Actually I prefer eureka lemons for limoncello because the are easier to zest. But Meyers do have a wonderful flavor. Lemon curd is dangerous...I would eat the whole batch. I have been using lemons with pasta, salad dressings, cocktails. One of my favorite things to make is Rao's Famous Lemon Chicken (but I use half the amount of oil)---I don't do the whole method...just the sauce which is delicious on everything.

If you're overflowing, you can do curd, mousse, limoncello, pasta, cake, bread, cookies, lemonade and more. I still have lemons left over and it's not even my tree.

Homemade chicken and rice soup...think I put in too much rice, as all the broth was absorbed quite quickly. Going to embark on making bean and bacon soup with a package of bacon ends I purchased online and have just about finished thawing.

Grilled Cheeseburger sliders and oven fries for my family

spaghetti with meatballs & jarred marinara sauce for me. Finally finished the Costco 3-pack of sauce; too cloying but more enjoyable with meatballs & some Rao’s sauce.

russet potatoes although the recipe suggested Yukon Gold.
I used olive oil as opposed to any other oil.

475 (450 ok) at 30 minutes, then flip potatoes and another 15 minutes. Crunch.

the key is the 10-minute soak in hot tap water.

The recipe is a giant McCormicks advert but the cooking part mostly worked; I had to adjust due to our own oven.

Skirt steak slathered with Sweet Baby Ray's and grilled, with special potatoes (that's what we call rehydrated hash browns from Costco with chopped onion, butter and salt and pepper wrapped in foil and grilled alongside the steak).

Edited to add: Ended up making what my mother called "raw fries." Using a potato peeler, slice a couple of potatoes into a frying pan with melted butter, salt and pepper and onion powder. (I would use real onions, but someone who claims not to like them has to be tricked.) Fry until the potatoes are crispy on the bottom, turn over and fry until crispy on the other side.

Pizza (we buy the dough and then use Rao’s pizza sauce and low skim mozzarella)

what’s the difference between pizza sauce and marinara sauce??

Tonight I had Old El Paso chicken fajitas followed by a homemade rice pudding. My goodness it took me back to my childhood - my mother bought it tinned rice pudding bless her so this was 10 times better but - it did make me nostalgic.

Rice pudding recipe please :-)

I bought a sourdough baguette today which wasn’t eaten for luncheon so I had some with butter and calabrese salami for supper. I was mostly holding out for dessert of Doubletree cookies! Yum.

God I think I just made the world's best meatballs. Did them with a simple tomato sauce (oil, fried garlic, basil). They were so tender. Served with crusty bread.

Spaghetti Puttanesca with a side salad. I'd forgotten how good a Puttanesca could be. Followed by rhubarb crumble and Cornish clotted cream.
