Last night's dinner in Zagreb, Croatia. Funny little restaurant that only had 2 entree choices...steak or tuna. The beef was a filet which is usually my least favorite cut of steak. They may have changed my mind...it was delicious. It was the size of 2 filets and was so flavorful and well seasoned. It came with roasted baby carrots that were wrapped with bacon & had a maple syrup glaze. The plating looked like bony fingers on a hand.

Smoking meats - chicken, spare ribs, sausage -- today for a family gathering tomorrow. About 3-4 hours to go; just put the Italian sausage on. Dry rub on the chicken and ribs; they've been on about 3 1/2 hours. Will begin basting with my "home-doctored" bbq sauce in another hour for KC style (which all prefer here).

Last night - took some store-bought carnitas - chopped them up with a bunch of broccoli and a red chili and roasted that in the oven, took some yukon gold potatoes and diced, oiled and seasoned, and put in the air fryer, and diced some tomatoes, scallions, and Italian parsley and mixed together ...
Put a base of the potatoes on the plate, topped with the carnitas and broccoli mix, and then the tomato mix ... and put a bit of sharp cheddar cheese on top.
This made for a somewhat healthy-ish dinner, notwithstanding the choice of meat.

Pan-seared then 450-degree baked salmon fillets served with a black lentil relish.


Maybe I saw it because a friend has a ginger cat that's huge, but...
He is a jerk. While I was cat-sitting, he walked over to their front door, stared at me, and peed on the door and floor.
