I've been lazy about posting lately, and dinners have trended more toward quick meals or takeout as we've been busy. Our last Sitka Shares shipment included several types of salmon. My wife made a baked Coho salmon last night. I don't really care for salmon, but the Sitka fish is so good that I didn't mind it. She rubbed mustard on it and then some type of spice mix on top of that. It was way too mustard-y .

Today, we're going to use a thick filet of King salmon to try making lox. A new experiment for us.

Mmmmm, that looks so good! Took our nephews to the Cubs game last weekend. After a little searching, I finally found a concession stand selling the Wrigley Smokie, something I haven't had in a few years because they keep moving things around. Covered in mustard, grilled onions, tomato, and sport peppers. It may even have been worth the 15 min wait in line due to silly COVID line re-configurations.

For any other searchers, it's sold at the stall in far right field, last food stand on that side.

I may try it with cream of broccoli soup next time I make it. Add a little broccoli to the mix too.
