I never use eggs. The recipe finkface posted is closest to what I make. Make a roux. I have never heard of eggs in mac & cheese. And I love a lot of panko or crunchy bread crumbs on top.
I just read the Andy Reid one...that wins because it has bacon!!

I remember every cook in my family using eggs, evaporated milk, and Velveeta plus two other cheeses, oh, and a few drops of hot sauce. 😀

Need a scoop cut though, but win $$$ on your poker night.
Exchange Evaporated Milk for whole milk, and it's much closer to anything "Southern" in my life.
