I need to up my game beyond the steaks that I make, but I just love these. This is a 36h dry aged Aussie Wagyu ribeye. Cooked it hot and fast on cast iron. Had 2022 Bourbon County Stout Coffee with it.
made my wife a similarly aged Aussie blue label Wagyu hanger with chimichurri and she loved it.
last photos are from my friends house earlier in the week. Hes one of the best pitmasters in DFW and hosted an incredible dinner this week at home. Pics are of the steaks finishing over his backyard pit. They were about 4lbs each. My pictures dont adequately capture the size (story of my life).

Dillons, our local grocery store (Kroger family), had a sale on their fried chicken the other night when I stopped by to pick up one item (lol). It's actually quite good, so I picked up a container and was pleasantly surprised. Had the last two pieces tonight with a side salad and some rice (plus plenty of hot sauce). Delicious and filling on a cold, damp and windy night.
