Singapore:
The Singapore Flyer (Ferris Wheel) with a wide angle gives a great view if you have steady hands.
The New Asia Bar has multiple angle views, all great.
I wasn't as impressed with the Marina Bay Sands view, plus it's great to get it in the shot.

In Paris the city of lights has awesome photo ops at night
1. Trocadero
2. Champs Elysees near the Arc and walk from there toward the Louvre.
3. I don't know if Samaritaine keeps the observation deck open at night anymore but you get a full 360 of Paris from that vantage point.
4. Notre Dame.
5. Side streets around Les Halle
6. Sacre Couer & Montmarte hill
7. La Defence

A slight refinement to the Hong Kong Peak suggestions - if you are able to escape from the Peak Tram upper station building (they make it almost impossible to find the way out, so you'll spend more in the awful shops inside!) take a 3-mile walk around Lugard Road, which contours around the Peak and gives the most superb shots all the way round from Central & the harbour, to include Lantau and Lamma islands, and the Pokfulam country park. The entrance to the anti-clockwise version of this route is down some steps immediately to the north-west side of the Peak Tram top station building.
The 'road' is driveable in parts, but mostly is a concrete footpath plus railings. A good time to start is late in the afternoon, when you can get nice low-sun shots, the sunset, and then the city lights (best with a tripod). The walk's quite wooded, so you're protected from the sun, and you can include pretty vegetation in the images.
Mosquito repellent is essential (or it certainly was the last time we did this walk in September!). When you've got bored of photography you can then have a nice meal at the Peak Lookout restaurant, or a Haagen-Dasz in the Plaza.
Incidentally, if you head up the steep road to the right just opposite the tram plaza this winds its way up to what used to be the HK Governor's private garden. There's a carpark up there, and yet almost no-one ever goes; it feels almost like you're back in Victorian times.
When I've worked out how to post images to this board I'll add a couple...
