And the only way to eat this 'classic' version is hot - straight from the pan.

If a bar or restaurant tries to give you one of these (without onion in it) and it isn't freshly made, find somewhere else to eat immediately if you were hoping to eat well. It's the perfect barometer dish for gaging standards.

Basil, thyme, parsley, grated Monterey Jack cheese, tomatoes, caramelized onions, red peppers (they're the sweetest) and diced ham.
We'll be going to the Caribbean next week and I'm planning on having one every day.

Usually I don't order omelete very often when dining at restaurants in HK. But last week, I ordered one which had diced Cha Siu (Chinese Barbequed Pork) inside it. Tasted quite descent and I certainly would not hesitate to include this when I make omeletes of my own in the future. ^

A local egg place (very good bennies and omelettes) has one called "Bonne Femme". Bacon, swiss chess, and lots of mushrooms. Ultra yummy.
