Ham, cheese and scallions as a "base" work fine. Olives - I'd prefer to avoid. The big no-go? Green bell pepper! Rest (including anchovies!) negotiable.
I like sliced avoacdo with burgers/sandwiches, and I like guacamole (usually) but ... avocado in omlettes? :confused: |

I had an excellent spinach and feta omelette the other morning...
Normally I prefer lots of cheddar and a meat product, usually ham or bacon. |

I saw a strange thing in the Hilton La Jolla on Saturday: someone put chocolate into her omelet. I haven't tried that, but imagine it couldn't taste too good.

It's hard to choose one type of omelette. My staple is bacon, mushrooms and swiss, but I do so enjoy a nice spinach and feta omelette. Heck, I wouldn't turn my nose from a slice of Velveeta folded into an egg.
