What do you like in an omelet?

I like swiss cheese and green onions. I also like grape jelly and cream cheese.

spinach, onions, ham/bacon, cheese, green peppers

pretty much anything except mushrooms and olives

Lately I've been using my fresh-from-the-garden tomatoes and basil, along with a little feta cheese. Mmmm...

I like ham cheese peppers and onions. But the peppers and onions need to be finely chopped. Nothing turns me off to an omlette more than large peices.

Farmer's omelet

I found a recipe on epicurious.com before I headed home for a zuchini omelet. It was excellent. Seasoned with black pepper and marjoram. I couldn't resist adding swiss cheese. Served with toasted english muffin bread and a salad.

potatoes, onions and salt - classic Spanish tortilla

also good with wisp thin esparragus and a touch of garlic

with sugar and dashi to make a rolled omelet

And the classic chervil/chives/parsley combination is a winner


I once had a strange combination of potato and grated cooking apple with a bubbling coating of parmesan which was rather nice - enough to replicate it at home a couple of times.
