I like all kinds of omelettes but am most fond of ...

1. grilled onions and spinach

2. lox (try grilled salmon as an alternative) and onions

No mention of avocado in all these posts?

I'm a fan of avocado, heirloom tomato, and nice cheese medley, maybe a little sprig of basil.

Ham, cheese and scallions as a "base" work fine. Olives - I'd prefer to avoid. The big no-go? Green bell pepper! Rest (including anchovies!) negotiable.

I like sliced avoacdo with burgers/sandwiches, and I like guacamole (usually) but ... avocado in omlettes?

I was just about to say!

I like scrambles more than omelets, but close enough:

-3 eggs
-Avocado, cubed.
-Ham, cubed.
-Onions, julienned.
-A little bacon, crumbled.
-Mushrooms, sliced (....ake are best)
-Gruyere, shredded on top.
-White pepper, freshly ground.
-Dollup of sour cream.

Cook it in a little butter and olive oil. Oh yes... oh yes.

I had an excellent spinach and feta omelette the other morning...

Normally I prefer lots of cheddar and a meat product, usually ham or bacon.

I saw a strange thing in the Hilton La Jolla on Saturday: someone put chocolate into her omelet. I haven't tried that, but imagine it couldn't taste too good.

It's hard to choose one type of omelette. My staple is bacon, mushrooms and swiss, but I do so enjoy a nice spinach and feta omelette. Heck, I wouldn't turn my nose from a slice of Velveeta folded into an egg.
