It's all about the GREEK omelet! Spinach, melted feta, and sauteed onions.

Coming in at a distant second, at Lou Mitchell's restaurant in Chicago (one of the world's great diners, open only for breakfast & lunch), they make an exquisite omelet with tart Michigan apples and cheddar cheese.

If I had to choose a third, the salami & eggs with plenty of onions at a good Jewish deli is always a solid choice. Rye or pumpernickel toast on the side is essential.

1) Lump crab meat, avocado, and wild mushrooms

2) Lox and sweet maui onions

3) Blue cheese, Virginia ham, and grilled vegetables

A: cheese, shrooms, onions, pepper and black pepper
B: fried rice with chicken, onion and ketchup (i dont know how did this combination come together, ask the japanese)
C: Ramen-ish japanese noodles in Nagoya.

The AA First Class Omlet
 
I love the Spanish Omlet you get on American Airlines with cheese,beans,rice,steak,olives and other goodies it's like a burrito. I am sort of picky that the omlet has to have cheese in it as I feel it's bland without it.An interesting addittion to the AA omlet would be adding tortilla strips inside the omlet. And a good omlet needs to be served with potatoe's O'Brien with ketchup,onions and tobasco sauce(: Served with a mimosa.

I am certainly into the move savory fillings. I love goat cheese, mushrooms, tomatoes, green onions, spinach, etc. Obviously not all at once. :p

I think it comes from my aversion to "mixing" certain foods, but I don't care for omlets - I like my scrambled eggs, but I like them plain. I love a lot of the add-ins people in this thread prefer, but do I want them in my eggs? Not so much. I may eat it on the side, but can't have it mixed into the eggs.

I also hate cheese (the smell of it actually causes me to be nauseous), so that could be another reason I've never been "into" omlets.
