I'm with you . . . too much cheese can kill a decent omelet. For me, mushrooms & ham, with light cheddar on top (NEVER inside!).

I like all kinds of different things inside and outside an omelet, But I don't like 'fluffy' eggs. The best I've had use well beaten eggs spread thin and wide on a large griddle, then rolled up like a burrito. I don't care for the traditional 'folded over' type, though I'm a master at making them for others.:)

Also, I once had an omelet with shrimp, crab and cheddar cheese (at Elway's in Denver) and that was amazing. |
I ate ham, onions, black olives, mushroom, sausage, chedder omelet and it was so delicious to eat the breakfast time in the morning at the hotels. I am very full that I ate breakfast buffet.
I do enjoyable for my stay at The Orleans hotel for 3 days. We have a nice place to stay at entire hotels. I won't go to another expensive hotels anymore. |

I've been really enjoying this simple rice cooker recipe for a baked fat omelet

Oh yes, and I add 4 eggs rather than 6 - even 3 big ones do the trick in my 5 cup rice cooker. I tried making a Spanish tortilla de patatas with this method but it just didn't work out for me. For some reason it tasted bland - the baked 'frittata' recipe I linked to does need the grated parmesan for an umami kick. I guess 'tortilla al horno' (baked tortilla) just isn't for me. |
My usual omelette has mushrooms, onions and sausage (or bacon/ham), not too much stuff as the egg is obviously the hero of the dish and too much stuff/herbs overpowers the flavour of the egg!
