Which ones do you believe should have been on the list? Had a reservation at Providence a couple years ago but had to cancel unfortunately.

This is a generalisation, but I suspect that haute causine in the US outside of New York (and a couple Chicago places) travels less well. This could be why other US restaurants (including in LA) aren't honoured as you might expect.

My favorite NY restaurant is Masa, though I do think they take themselves "just a bit" too seriously and are slightly overpriced.
And if I'm going French fine dining in NY, Daniel it is. Their consistency is amazing and I'm talking 60+ visits over past two years.

I thought you would want to hear back from a quick check on the Mexico City restaurants:
Biko, run by two San Sebastian brothers was phenomenal.
Sadly, I then had to run for my annoyingly timed AA flight, but my friend reports that Pujol was the best meal he'd had in his life, and he's done a good dozen of the top 50.
Quite a hotspot, and at good value.

I thought we were going to be dining at a 3-star called L'Arnsbourg in Alsace tonight. Called in a rush in between flights, thrilled to get a table on very short notice, and got the email confirmation back later - from a different restaurant! Mixed up my numbers, dang it

Putting The French Laundry at #47 is ridiculous. It deserves to be far higher.
I ate at a 3* Paris restaurant this month (Guy Savoy) and was under-impressed by the food (the service was superb, though).

At one stage one of the owners came around to check on us and insisted that we should try an extra course of Iberico pork over and above the usual taster menu, which was wonderful.
All together it came to about $170USD per person including matched wines which is a bargain compared to restaurants of anything like this calibre in both Europe and the major international US cities.

We went to Attica in Melbourne and did the 8 course degustation a couple weeks ago.
The service was great and the food was amazing. Being in Aus it was fairly pricey at $600 for 2 people. A good experience, but would only go for very special occasions.

Caprice in Hong Kong is an amazing restaurant. By far the best service I have ever received in my entire life.
The person I dined with decided to order a la carte, as such, we were torn between three apps. We ordered the two we wanted, and when the apps finally arrived, the waiting brought our the third we were torn on free of charge.

I'm a big fan of the degustation menu in general, but it's easy to overdo it. Last week after four hours at one place I walked out feeling woozy, thinking that's it, never again
