Dined out tonight - prime rib (just on the rare side of medium rare) with sauteed mushrooms and onions and a mixed salad. It was an iDine (Rewards Network) place - iDine nrework has a triple miles promo, so I wanted to get a "dine" in before the 2/28 cutoff.

Two dinners tonight actually (burp):

The meal after a funeral today; typical Hawaiian kaukau: rice, braised chicken, sushi, mac salad, chicken longrice, and desserts (including several kinds of malasdas).

Then met Mrs. cblaisd at a friend's house where they were finishing up just-caught, macnut-and-cocount-encrusted spearfish with rice.

It would have been rude not to have some, no?

Baked swordfish with mac nuts and rice

(Preheat oven to 350. In a small rectangular baking disk, mix together 3/4 cup of white rice, 1 1/2 cups water, 2 Tbsp of corn oil, 2 Tbsp of shoyu [aka soy sauce], 1 tsp of thyme, 3 Tbsp of chopped macademia nuts, and garlic salt to taste [1/2 to 1 tsp]. Place two small-to-medium swordfish filets in the pan with the rice/water/spice mix. Cook for ~25 minutes or until fish is done and flakes easily, and water is absorbed by rice and every-so-slightly beginning to dry/crisp around the pan's edges)

Garlic breadsticks.

Green salad.

Tangerine

Breyers Strawberry Ice Cream with chocolate sauce.

Last night:

Daughter and I had a hankering for Mexican food. Went to Luquins . Was not disappointed. The refried beans and the chips were especially excellent.

Tonight: Did mesquite-grilled porkchops and ono filets, salad made from goodies from the Hilo Farmers Market, unremarkable bread, and Breyers Ice Cream for dessert.

Tonight's Fourth of July fare:

On the Weber kettle smoking with mesquite and charcoal are two slabs of pork ribs, a dozen Italian sausage, two chickens, and a slab of salmon -- all complemented with my homemade barbecue sauce.

A fruit salad of blueberries and strawberries topped with whipped cream (cute, huh?)

"Ranch style" barbecue beans cooked with some of the rib and sausage meat.

Toasted garlic buns made from Mrs. cblaisd's homemade rye rolls.

Green salad

Homemade apple crisp.

Homemade vanilla (Hawaii vanilla bean) ice cream.

And beer :)

Tilapia, squash, rice, and a ton of yeast rolls. Plus milk and brownies. And chips.
Did the cookout things with burgers and beer overdose last night.

Kangaroo stew!
 
To celebrate NAIDOC (National Aboriginal & Islander Day of Celebration) Week, we have been lucky enough to celebrate in style, with lots of 'bush tucker' made into delicious dishes.

I hadn't thought about making roo into a stew - it is tender and succulent, and wholesome, with mushroom, carrot and potato.

Wonderful winter food, as we acknowledge the custodians of this land in which we live ^^^ :) and we celebrate NAIDOC together :)

I just finished cleaning up and it was grilled salmon and veggies in foil on the BBQ. Yummy.
