Years ago, there was a chain in the food courts here in Pennsylvania called Bourbon Chicken. As I recall it was all Cajun types of food including jambalaya and gumbo, plus the namesake bourbon chicken. I don’t think that this chain still exists.

It’s very common most places I’ve lived in the southeast. Of course it’s no more Chinese than bourbon. But when it’s done well, it’s delicious. I’m all about flavor. I don’t give 2 sh*t’s about authenticity. I’m looking forward to reading the thread.

edited to add: I read 2 out of 3 pages and I must say there’s no snark like Chicago snark. Also the OP reminds me of someone here.

Taco salad. Last homemade dinner until next week, vacation starts tomorrow. Since I may not post much for the next week, here we go: Fresh shrimp, fish, oysters...repeat through Sunday night. :)

I wish my wife wouldn't get nauseous when I broil lamb, pork, or steak in the house. Went to a local restaurant and had 2 butterflied pork chops broiled with just salt and pepper with a side of broccoli. Cost $29.95 and included a small salad (house or Caesar). I can buy a package of 6 for about $12.00 at Publix, but I don't need to have her complaining about the smell in the house. I don't use a BBQ because of the weather outside is usually rainy right now in SFLA.

Cold front didn’t make it that far south? It’s still warm up here, but it has dried out and not rained in a week.

would an air purifier, overhead vent, and open windows help? I definitely use all 3 when cooking anything no matter who else is home.

I use the latter two, but she still feels bad, even though she enjoys the food. It may be the Cancer that has changed her body reactions.

Presuming you have a garage, could you do them in the garage on an electric George Foreman grill? At least it would get the smell out of the house. I don't currently own a Foreman, but when I had one I often used it for steaks and boneless pork chops.

I'm trying this recipe for chicken, potatoes, and carrots in the crock pot. My parents are not adventurous eaters, and I wanted something healthier than many of the recipes my mother cooks.

Good luck. Any time I tried to introduce my mother to a new food, she’d push it around her plate and tell me she found it interesting.

I have grilled in the rain holding an umbrella. Unless it is a downpour it isn't too bad.

I think that is a good guess (like smell changes during pregnancy) - what about if she wears a good n95 mask (the good ones don't allow odors in if fitted properly - even with non medical ones I've had issues with things I tried to smell while shopping) while you're cooking and thoroughly airing out the place after cooking before she takes the mask off (sort of simulating the cooking in a restaurant kitchen followed by serving in a different room)?

It didn't go well. She complained that it needed salt (because the salt in the recipe wasn't enough), and then complained that the carrots weren't cooked enough because they were tender but not soggy. My father liked it though.

LOL, she dumped a bunch of salt on it.

I modified the recipe a bit. I started the veggies first and cooked them for 3 or 4 hours, then added the chicken. That way, I didn't have to reheat the chicken. I'm not a fan of mushy veggies, so they were fine for me.

My mother cooked pork chops in the crock pot tonight. They were decent, but I feel like every meal she makes includes soup or soup mix of some sort. Tonight's included onion soup mix.

our supper guests are bringing supper from La Corneta taqueria. I told them that I’d make guacamole and pico de Gallo plus that I have Jarritos and topo Chico.
oops it’s starting to oxidize so I wrapped them. I prepped an hour ago because I didn’t actually know their eta and these are potential future inlaws.

I've always liked salt too, but a couple of years ago my cardiologist insisted I cut back, which I did. After my lab results a few months ago came in, I was very low, and they advised more sodium in my diet..
I asked how often they ever suggested more sodium for their patients and they said "uhm, well.....almost never". After increasing the sodium, not only does my food taste better, but the nighttime leg cramps have gone away.

I usually tend to overeat Mexican at restaurants too. Just love it too much.

If you're talking about the guac oxidizing, try adding more citric juice (lemon/lime/orange). Another way to prevent this is to put some cling wrap literally on the surface of the guac as soon as you're done (although this only slows the process). This is why they suggest not making it until the guests arrive or shortly before (and in small batches)

grazie - I just hadn’t been aware of when they’d arrive. It worked out - they knew I had made this today and the oxy wasn’t too awful. I got good compliments for both the “pure” avocado and the guacamole (with cilantro / jalapeño). Of course, lime juice in both.

The other mom was very thankful for us having sour cream because I guess the pico de Gallo was even spicier than expected lol

i really should have cut my burrito in half before eating it. Omg.
