iced water - I totally forgot about the Topo Chico y Los Jarritos that I placed in the fridge just for tonight!

the pico de Gallo is so amazing that as long as I have any tomatoes (which’ll be standard for this summer!), I’ll keep making it. Just must also remember the cilantro. (I still have a full unit)

enchiladas verde (Trader Joe’s reheat)

our child didn’t want enchiladas so I made some penne and reheated the remaining meatballs & marinara from last night. The marinara is Rao’s and sooo good - I prefer to just eat the Rao’s instead of making marinara with San Marzano (DOP) like before... the Rao’s is the best bottled sauce I’ve ever had!

We did a steam pot last weekend so we're going to use the leftover shrimp for shrimp and grits and the leftover crab to make crab cakes.

Seriously, the guy must spend all his time cooking.
Last night I made pesto for the first time! It was delish! We were watching Queer Eye last week and one of the recipes that Antoni taught the makeover person to make was pesto pasta with pickled grapes. It sounded good, and it was really good.
In the cuisinart I put waaay too much garlic, basil, romano cheese, and pine nuts I'd toasted in a pan, then added olive oil and lemon juice.
Served with orecchiete and sauteed chicken thighs, and red seedless grapes I'd soaked in some balsamic for 20 mins. And some alvarinho. It was great.
