Take out night. We are trying a new (to us) Mexican place. I will order carnitas so I can compare them to others in the area.

100g pancetta
1 onion
1 carrot
1 bit of celery
1 knob of butter
4 pork ribs (nice meaty ones are good)
2 rump steaks approx 250g each.
glug of red wine

4 cans of baby roma tomatoes.

for the involtini/dressing
equal portion of parmigianno/pecorino and parsley
a handful of pine nuts

Pound out the rump steak (you can use chuck/sirloin etc just a good fatty cut that will stand up to a slow cook) then spread the involtini filling in the steak and roll it up and tie with butcher's twine or toothpicks.

Add olive oil to large dutch oven style pot and brown meat and remove.

In the same pot add the butter (if you can get lardo use that), pancetta and sofrito on a very low heat and cook slowly until the onion is soft and translucent.

Add wine and tomato paste and let the alcohol cook out

Add the canned tomatoes and give it a swirl to mix everything up.

Add back the meat ensuring it's all covered by the sauce if it's not add a little water.

Put on a very, very low heat uncovered on the stove. It shouldn't be simmering at all it should be maybe a bubble every 30 seconds or so comes to the surface. Leave for 5-6 hours.

Remove meat (this is traditionally eaten as the main course) and you're left with the sauce.

Pick a pasta and eat. Don't use spaghetti!

There's are a million +1 ways to make this but this is more or less how I was taught. The most important things I think are unlike bolognaise this should have a lot of tomato sauce, the very low and slow cook which puts so much flavour in there and the meat needs to be whole pieces not ground (preferably with some bone in there).

i was referring to SPLASH movie with Daryl Hannah where she plays a mermaid who eats her seafood (lobster) with the shell. I dont eat the shell like she did. I also dont heat up the crab legs. Costco cold section to my car to our fridge to the serving bowl. At some point Ill buy it from Costco where they failed to cook it and then I might regret not cooking this.
Yes, I love that scene in Splash where she eats the lobster.
I would use canned crab for crab louie. Jumbo lump.
I heat up my crab legs. I don't think they are ever sold raw...why would Costco fail to cook them?

That is not going to happen---Costco is not cooking them in the store. They arrive frozen and cooked and it would be very obvious if they are not cooked. You could never confuse a cooked lobster tail with a raw one--they are a different color and the meat is obviously different.

I splurged and got meat today from Whole Foods' curbside pickup, putting it to good use for Sababa cookbook's coffee-rubbed ribeye steak. I had my doubts, but, once again, the cookbook came through. I was also made a fan tonight of halved broccoli florets mixed with salt, pepper, and olive oil before being added to a cast iron skillet with canola at medium for 2-3 minutes per side. They picked up a pinch of cardamon from the cast iron's previous guest.

detroit style pizza with beef sausage (Costco kielbasa) and red onion

thanks - but these are king crab legs and not lobster tails. Isnt it at all possible that an error occurs and I dont notice until that moment of consumption?

You know the Costco beef kielbasa has a pork casing, right?

yes, the packaging specifically mentions it. Im not really sure if any sausage can have a non-pork casing for that specific function. I feel that soyrizo and tofurkey sausages lack casings :-)

Blah. We will return to our usual Mexican restaurant. On hold for 4 minutes until my order was taken. Not given a pickup time so waited 15 minutes for food. The restaurant seemed chaotic despite not appearing too busy. Food was bland, presented with no style. Prices were on the high side of the local standard. At least they got the order correct.

I think Ive had vegan sausages with removable plastic casings.

Sigh not fun. At least now you know! Glad that you have a usual spot :-)

You changed from having take out cheeseburgers to pizza? How far ahead do you do meal planning? I find that I eat much healthier for less money and fewer trips to the store when I plan out a few days in advance .
if you can't tell the difference in appearance between a cooked crab leg and a raw one & think you might eat it raw by mistake then you need your eyes and imagination checked. It is very much like a cooked vs a raw lobster. Fortunately the rest of the world can tell and there is zero way that a raw crab leg is going to go unnoticed and on to the shelf.

It’s Ash Wednesday. Mrs BV has requested a vegetarian meal. I have an eggplant, onion, zucchini, olive oil, garlic, a bell pepper and a can of San Marzano tomatoes so will produce some .......ized version of ratatouille for us. I suppose most of the .......ization will come from the spice cabinet. Sorry if I shocked anyone. I had no idea that b@stard would be censored.

You seem to be operating from the assumption that some person has two piles of king crab legs -- one raw and one cooked -- and is moving the raw ones to the pot to boil/steam, then moving them to the cooked pile, and that through some momentary lapse in judgment, they might forget to put them in a steamer and put them in the cooked pile. But that's not how it works. Why don't you watch this video:
