so tonight what's it gonna be? I'm thinking chicken. I have these pastured chickens that I purchased from a local farmer.

Perhaps I'll butterfly them and marinate in a spicy lime achiote sauce then cook on the barbecue...could be. Perhaps. And with it...uh, let's see, fresh from the farm chipotle glazed carrots with fresh chopped mint and cilantro? And a salad...

Dessert...dessert...maybe a chocolate pudding? That would be fun. But requires a little advance planning. Have to see how the day goes.

With some caught-last-week-in-Alaska-rockfish from a friend....

Baked rockfish in rice (very simple -- put rice, water, sesame oil, grated gingeroot and garlic salt in a pan, stir til mixed. Lay fish on top and bake at 350 til done)

Leaf lettuce salad with homemade croutons

Homemade rye rolls

The vegetable lovers also enjoyed the quick-braised sugar-snap peas in sesame oil.

Chocolate and white chip coconut/macademia nut cookies (thanks to Mrs. cblaisd's incredible baking skills).

night before we had quesadillas also. Made with barbecued pastured chicken in an achiote, lime and ancho marinade.

Last night we had a long simmered bolognese sauce made from free range pork and grass fed local beef, along with home made fresh pasta and a salad of organic mixed greens and home made ranch dressing.

Tonight: charcoal grilled 3 Alaskan salmon steaks brought back from a fishing trip by a friend two weeks ago; marinated in a mixture of corn oil, shoyu (soy sauce), lemon juice, and fresh grated gingerroot. On the grill they were joined by ears of just-picked corn from the neighbor's garden (simply grill in the husk).

Accompanied by sweet rolls and a mixed green salad, and topped off with the last of the Fourth of July homemade vanilla ice cream.
