Corned beef, cabbage, carrots, and baby potatoes. We usually make this 2-3 times a year without regard to St. Paddys, but it's been a while. Corned beef brisket has strangely been around $8/lb for a long time. Thanks to the Saint, we stocked up at $3.89/lb.

Fried fish, french fries, and apple pie. Fish fry from a Methodist church. I wanted cole slaw, but they ran out about an hour before I arrived, so I had to settle for applesauce, which I haven't eaten yet. The apple pie was delicious.

ETA - so good. Why didn’t I cook one sooner… tempted to buy one to freeze. Plus then I can use red and Yukon gold potatoes instead of russet. Plus I wish that I had more carrots. I’ve tended to underuse carrots when making stews and corned beef.
