I have always thought that shellfish gets tough when it is boiled and should be cooked gently--steamed. Shrimp can also be oven roasted (my preferred way). I guess that hasn't been your experience.

100% standard method for Dungeness crab here is boiling in salt water. All the local places that sell cooked crab do it that way. Ideally in clean seawater, but salted water is fine. Not tough at all. Remember, you're cooking the whole crab intact.

after reading the CDG AF F lounge TR by aw which mentioned that Rasa in Burlingame is as good as Dishoom, I had to have Indian as a late supper.

Grew up eating Dungeness that we caught, and never committed the crime of killing them in heavily salted water. A tsp of baking soda in the boiling water, then a splash of cider vinegar near the end worked beautifully and didn't leave the meat excessively salty.

Interesting. I have had them cooked that way once or twice, and they were terribly bland. "Washed out" we called them. Cooking the crab in salt water doesn't make them overly salty at all. In fact, many folks choose to either lightly salt the crab meat or dip in salted butter or mayo after cooking. To each their own.

Maybe it depends on how fresh your crab is. When you caught it the day you cook it, excessively salty water ruins the actual crab flavor. Of course, some people just like really salty food - we don't.

After skipping dinner the night before - I got a takeout pizza with artichoke cream, egg, and guanciale from Extra Virgin Pizza next to the Westin in Singapore and ate it in my room - it was better than I expected it to be

Yummy! That's so delicious! Singapore pizza is very good. Perhaps, you can try to eat something different. Try to get some eat Singaporean foods. Try to get chicken teriyaki or something like that.
