How funny - I also made green chicken curry yesterday (with a packet of green curry from Thailand which I'd brought back) but not too authentic b/c I used chinese eggplant instead of proper thai ones, as well as some fresh (frozen) mango. Not in pressure cooker though so not overcooked
But I did use coconut milk imported from Thailand (Aroy-d which is 100% coconut milk).

I made a black bean (from dry beans) and andouille sausage soup for the blustery weather were having. Its supposed to be 70F over the weekend and into next week though.

They're totally a Wisconsin thing, but TJs knows what's good! When we went to Wisconsin a couple weekends ago we stopped at Mar's Cheese Castle on our way, and I had to restrain myself to keep from getting an almond Kringle. But whenever I go to that place I always find a new cracker that I get hooked on and cannot find any place else under the sun. This time it was a French basil and olive oil wafer cracker, followed closely behind by a deliciously rich cheddar cracker. My friends who live in Wisconsin temporarily are in Chicago this weekend and I should have asked them to pick up a case of both for me.

My weekly grocery box was delivered today. I was excited to see the two purple cauliflower. The product description said I would receive either orange, green, or purple. I intended to steam, baste, then roast one, but I forgot to use the Steam function on the Instant Pot and pressure cooked the hell out of it. The second attempt was thankfully a success. It is basted with ghee, garlic, and salt, then roasted for 30 minutes in the toaster oven. 🙌
