Mom's waffles and sausage patties with mimosas for Christmas breakfast. Wonderful, easy, and enjoyable.

Getting the turkey cooked, with stuffing, pickled beets,peas and potatoes from the (summer) garden, baked sweet potatoes and homemade apple pie for desert. A couple bottles of Taittinger Champagne to wash it all down.

Oh, and last night it was -35 C and we spent it pulling the sleigh with the ATV (quad) great fun had by all :)

our family had the traditional Christmas goose on Christmas Eve, yesterday for the family I made a big batch of what we call Spanish Pork Stew, an easy & delicious dish:
5 pounds prok tenderloin, cut into l l/2 inch cubes l l/2 C pitted prunes 1 7 0z jar roasted red peppers, drained and chopped 1/3 C red wine vinegar 1/3/ C olive oil l 3-5 oz jar capers with 4 1/2 t liquid 3 T minced garlic 3 T dried oregano, crumbled 2 T pure ground hot chili powder (I use 2T Mexican and 1 T reg chili powder) 2 tomatoes, peeled and diced 1 C dry white wine 1/2 C firmly packed brown sugar 1/2 C (or more) concentrated beef broth 2 T red wine vinegar 2 T water 2 T flour Mix first 10 ingredients in large non aluminum bowl. Cover and refrigerate overnight, turning occasionally. Preheat oven to 325. Transfer pork mixture to a large Dutch oven. Mix in tomatoes, wine sugar and 1/2 C broth. Bring to boil over high heat. Cover and bake 45 min adding more broth if necessary to keep meat just covered. Uncover pan and cook until meat is tender, about 15 min. Cool to room temp. Cover and refrigerate overnight. Degrease stew. Bring to boil over medium heat. Gradually add 2T vinegar and 2T water to flour in small bowl to form paste. Gradually stir into stew. Reduce heat and simmer until sauce thickens slightly, stirring frequently, about 5 min. Enjoy ! |

Last night was the big Christmas celebration meal in this part of the world. Managed to BBQ a whole side of pork rib before the storm hit us. Mother in law brought over some overpriced chicken creation she had bought in....filled with apple, prune and something else I wasn't enamoured with......a nutty thing.
Today it's cold pork rib (made too much) and a whole beef fillet done in the horno. I'm also going to bake some whole bananas filled with brown sugar, knob of butter, chocolate chips and a shake of brandy.....might as well make use of the heat in the oven after the fillet is cooked. After that I can rest till next week when the whole carry on will start again. :rolleyes: |

In fact they didn't quite turn out as good as they should have been. Mother in law interfering with the cooking time didn't help.....plus I had to go easy on the alcohol because of her. :rolleyes: There are many versions of this about. Using a well ripened banana works best. Don't peel it just make a cut along the length of it where you can put in a couple of spoonfuls of brown sugar, the butter,chocolate and a generous measure of alcohol (dark rum works best) and bake till the sugar melts and starts bubbling. Serve the whole thing with cream or ice cream....you really need to have a sweet tooth to enjoy it. |

One of my favorite comfort/bachelor meals for lunch today:
Two slices of toast with creamy peanut butter topped with scrambled eggs I think the two go nicely together. Oh and a Diet Coke with Lime my FSOD (First Soda of the Day...it tastes the best :D) |
For lunch I had a sandwich on very poor quality and expensive Argentine smoked salmon. It had the consistency of wet smoked cardboard. :td:

So far just cereal and toast for breakfast. But dinner is going to be at a Thai restaurant in Raleigh I enjoy. A little red curry (spicy if you please) chicken. Mmm can't wait!

I was inspired to make Bolognese sauce this afternoon after a Flyertalker PM'd me to tell me that (s)he had made my recipe and it is "Awesome." :D

Had some pulled pork I made overnight in my slow cooker. Used pork shoulder and kind of a quick and dirty prep of pre-made seasoning and beer. Does anyone have a good pulled pork recipe (or any slow cooker recipes)?
