As of 9/21:

**Some domestic and short-haul international flights will include a fruit and cheese plate instead of tray meal service and will also have snack basket service before landing.

That just really depends on the crew and not the aircraft type. On my last MIA LAX flight, I was in J and the F FAs were helping the J crew proactively offering refills throughout the flight. Meanwhile, I have had very lazy FAs on 738s/321s who seem annoyed if you ask for a second drink in F.

1/30 AA 683 RDU-CLT A-321: No service either cabin
1/30 AA 6295 CLT-LEX ERJ-145: FA came to me on the ground and thanked me for being EXP and asked if I needed anything. I asked if she was catered and she said yes so I asked for a Diet Coke once we were in the air. I got it, sans ice, and was the only passenger served

On your CLT-DFW flight, you would receive a snack bag with bottled water, one of biscoffs/pretzels, and a hand sanitizing wipe; on your DFW-EGE flight, AA would serve you nothing. On both flights, if you would like a soft ( non-alcoholic drink ), you would need to hit the call button or visit the rear galley.

Well to be fair, it's not really that the perk was removed but rather, not available since AA isn't selling fresh food or alcoholic beverages in Y these days.

Currently on MIA-ORF, and as expected, the Republic crew makes zero interaction with any pax on boarding and once we takeoff, slam the curtain shot and sit in their galleys reading the entire time from takeoff to landing. Honestly, in an emergency, passengers won't know who to listen to because they never see the crew ever. Even in the safety briefing they are so passive. It's time that these FAs get penalized for ignoring the rules. In F, they are supposed to make an appearance to be available for drinks. I am trying to understand how AA can still operate an upgrade system that requires certificates and 500-mile segment upgrades on flights that have zero service (which is half the point of F anyway). That's not to mention I can see the FA pouring drinks into her cup, smashing the ice, and filling a takeaway bag with extra liquor presumably for her hotel.

That's a little harsh... it's a nationwide tragedy that yellow and white cubes pass as "cheese" in America but I find it hard to fault AA for going along with that. Last time I had the cheese tray, it had what I would have described as white cheddar, yellow cheddar, and smoked Gouda.

If you find yourself on an AS flight, I would definitely recommend trying it.
While this AS blog post is now dated, it is an interesting read nonetheless concerning their F&C:

Beecher's is really, really good. They have a shop at SEA C Concourse where you can buy their many varieties of cheese and/or made-to-order grilled cheese sandwiches (what else!), mac-n-cheese, soups, etc.
Worth a stop-in regardless the terminal(s) you're transiting.

I haven't tried Americans fruit and cheese offering yet, but as a point of comparison, I flew Alaska over the weekend and their "signature fruit and cheese platter" is divine. The platter contains three cheese options Seattle's famous Beecher's flagship, yellow cheddar, and brie accompanied by olive oil and sea salt crackers, sliced apples, grapes and milk chocolate from Seattle Chocolates. Very fresh and satisfying.
