Not sure why I'm responding to this, but here goes... 
Problem is that is such a judgement call. There are so many levels of "inebriation" from mild buzz to sloshy drunk. What I find annoying is when FA's use an arbitrary number of beverages are the sole measure. So on a six hour flight, when I get "that look" asking for my third beverage, and I'm doing nothing more than sitting in my seat working, it's annoying. Certainly a stumbling, slurring drunk shouldn't be given more booze (*maybe*).
Thankfully, most FA's abide by the "keep it comin'" rule. ^

You learn something new all the time. I always thought 1 oz was 1 shot, but I've never had the "minis" so I didn't know they were 2 oz.
It certainly does sound strange, but what does it really matter? The FAs are given a rule about doubles and if she's confused and thought that constitued a double, what's the bother if she's overly afraid of getting into trouble? You still got however many drinks you wanted all throughout the flight, no?

99% of the time I get served as much booze as I want... usually by smiling FA's happy to offer something they think is a nice perk of flying in F. This is an isolated incidet to be sure - not something that's widespread.
My guess is that the FA was just concerned about serving alcohol as BJ alluded to. If she did indeed have some sort of moral objection to serving a lot of booze - it's certainly a tough thing to deal with as anyone who has strong beliefs about anything will attest to.
The bottom line is you got everything you asked for, even if it required a bit more effort on your part. Kudos to the FA for serving it without too much fuss, and kudos to you for not getting bent out of shape about the rather abnormal service.

Are you a UA employee? If not, then butt out and mind your own business. I wouldn't bring my own liquor on to the plane (seems kinda trashy) but if you did this to me or if I saw you do it to someone else I'd definitely give you a piece of my mind. There is nothing worse than having to deal with some busybody pax on a flight. Don't you have anything better to do with your time than police others behaviors? HUGE HUGE HUGE HUGE

Not that I'd asked for 3 beers, it's just that the FAs kept offering more and were very enthusiastic about doing their job, even though the flight was sold out.

The last thing I would want in an emergency is some sloshed pax impeding an evacuation.
