Does anyone know what are MGM hotel policy for modifying the period of staying AFTER you check in? For example, I have an upcoming trip, but the end date is not set in stone. If I reserve a 7-night stay, but need to check out after 6-nights, will I be billed for 7 or 6 nights?

You have the option to change your check out date at the time of check-in or before without being charged an early check out fee. However, in the event you decide to check out prior to your confirmed departure date that you gave at the time of check-in, you will be charged an early check-out fee in the amount equal to the applicable rate and taxes you were quoted for all of the days remaining on your reservation.

The issuevent would be that you would need to cancel that seventh night at least 72 hours before the seventh night, otherwise you forfeit the deposit.
So it turns on how soon you will know whether the seventh night is needed.

I've generally found that basic rooms are better value via Hotels.com and Expedia, but the direct deals are refundable and also better value on the more swanky rooms, such as panoramic view rooms.

For a one night stay in center Strip, choices might include Cosmpololitan (younger vibe), Bellagio (more traditional lux), Caesars Palace (like Bellagio, must specify Augustus or Octavius tower). Opulent luxury in center strip is the Mandarin Oriental (no gaming, but many casinos next door).
Will your focus be on clubs and nightlife, fine dining, or what exactly?

If I only had one night and I'd not been to Vegas before I would definitely recommend the Venetian for that 'Vegas' feel.
Don't stay at the Bellagio unless you are going to splurge on one of the more expensive suites. The standard rooms are pretty average at best considering the cost. All the best things about the Bellagio (fountains, atrium, restaurants) are available to anyone, so do visit but no need to stay there.

Hard to recommend not knowing your age group, but we can start:

Age is around 40, couple. We are actually looking for a good deal in a luxury place. Perhaps even something with some food vouchers or other perks. For using the pool it is probably too cold in early January, so this is probably not a factor. But perhaps some of the resorts have indoor facilities.

The difficulity here, even with such a short stay, is the exact date January 3 2017.
The very next day is the arrival date for the Consumer Electronics Show, Las Vegas's biggest annual convention (up to 200,000 attendees and vendors).
You are extremely lucky (a good thing in Vegas) in that you are missing the hordes by exactly one day. But the result may be that, with New Years Day (another big Vegas day hotel-wise) just concluded, the hotels are quite likely to not start offering 2017 promo packages until the conclusion of CES.
Promos are for periods of lesser activity, and the week after CES, bargains will be there to be had. Also, most food/credit promos require a minimum two night stay.
As an example of rates, at the Cosmopolitan (my recommendation for you) a "wraparound terrace suite" with guaranteed view of the Bellagio fountains is USD 390 on January 3rd, and USD 1000 on January 4th. This suite is contemporary in decor but spacious and well equipped (the hotel is only six years old). Wraparound refers to the fact that the outdoor terrace wraps around two sides of the building, as these suites are placed in the corner of the building (and terraces/balconies are very rare in Vegas hotels - Cosmo has them because it was built as residences, not a hotel).
I think the Cosmo is perfect in midweek for an active 40 couple - it does skew younger on weekends - but on a Tuesday it would be fine. A great range of restaurants in house and many more food options in the neighoring Aria, Mandarin Oriental and Bellagio.
The Venetian and its sister the Palazzo are indeed fine hotels with very large rooms (the base room is essentially a junior suite), the main factor is the North Strip location. Although the Wynn is nearby, I find the Venetian somewhat isolated. And because the Venetian is the closest Strip hotel to the Convention Center, rates are already elevated. On January 3, the base-level suite that might normally go for USD 149 is already up to USD 309 for January 3, and USD 1,099 on January 4.
So to conclude, I urge that you make your decision and your reservation sooner rather than later, so that you can lock in a decent rate.
Once active registration for CES begins, the rates will skyrocket even more (Vegas hotel rates can change hourly on high demand dates). Don't fixate on promos, especially not on the night before CES.
Assuming direct booking, your room and 12% Clark County tax will immediately be charged to your credit card, however, if you need to cancel, as long as you do so at least four days before, the charge will be refunded. All Vegas hotels follow this practice, and most are very good about making the refund in a timely manner.

To add, pools are pretty much all outdoors, and most are closed down from end of October to beginning of March. It must be remembered that Vegas sits at elevation 2100 feet, so it does not have a temperate desert climate like, say, Phoenix, or a pleasant Mediterranean climate like San Diego.
