I'm looking at an October/November stay. The low $2000s seem to be as good as it gets, but it goes up to high $3K/$4K on some dates which I'm not prepared to pay.
I'll probably book the cheap dates now and look for alternatives on the expensive days, but is there any chance of the expensive rates coming down in the next few months?
I will be staying with my wife and our newborn, who will be 6 months old when we go to HK. The rate for 2 adults is higher than 1 adult, so to take advantage of the 2nd guest free benefit should I be booking as 1 adult and 1 child?
Would there be any issues with having the baby in the lounge for breakfast/evening? So far he has been very easy to calm, not sure how he will be when he gets a bit bigger!

I would certainly keep looking out for cheaper rates ( Mid$3ks seem about average and low $2ks are very good for the Conrad). The Hyatt Regency TST is very good and can be cheap .
I think the baby in the lounge should be ok as I have seen a few in the lounge ( do not have any children of my own so cannot br 100% sure)

Low 2k hkd at Conrad HKG does not happen too often. I’m happy if I can get anything <28k + tax/svc for 2 adults in standard room.
With the baby, I would opt for Garden Cafe for breakfast. That’s a complimentary option to Diamond. You can take the baby into the EL at Conrad, but I think I would be prepared to take the baby out immediately if he/she starts getting fussy. I would just be mindful of other people who are enjoying the lounge.

And as mentioned earlier, just please be ready to leave either place if the youngster gets fussy. Never fun for the other guests.

In any case, there's the JW Marriott and Shangri-La connected to the same mall.
If staying as a couple, I'd still select 1 person and add partners name when booking. Conrad HK provides a good baby amenity kit and worth requesting for a baby tub along with the crib.
As for lounge, no rules against children but apart from eating there's little for them to do there.

Using the Pay 3 nights, Stay 4 promotion that's ongoing, I was able to get a rate for late June of $1650 per night before tax.

are you looking at individual nights or the whole stay (multiple nights) ? sometimes the Hilton booking engine shows different rates depending on how you select the night. Try using the "Flexible Date" option to see how the rates are on each day. I remembered once having to split a 5 night booking to 2+1+2 for the best rate.

Other than all the shops at Pacific Place being shuttered and the mall being used as a chillout area, I would say the inconvenience is very much tolerable and safety issues are minimal. This is, after all HK, and most protesters are young, well educated and civil. Plus, you'll get a great view of the protesters from the 59th floor lounge. I'll try to attach a couple of videos I took (update: I couldn't).

I am. The hotel itself is like an Oasis, with staff deployed at every access to leave protesters out. During the protests themselves (which are not happening daily, and only at scheduled times) access by car becomes very difficult (police will escort your taxi in), and the MTR station might be closed off due to overcrowding.
Other than all the shops at Pacific Place being shuttered and the mall being used as a chillout area, I would say the inconvenience is very much tolerable and safety issues are minimal. This is, after all HK, and most protesters are young, well educated and civil. Plus, you'll get a great view of the protesters from the 59th floor lounge. I'll try to attach a couple of videos I took (update: I couldn't).

But on your pther matter. Glad to hear the staff is taking care of all the guests so well and aside minor inconveniences, your stay is what to be expected from Conrad HKG.

They need a place to escape the hot, humid weather, take a break, and use the bathrooms, after all.
Once you're back to hotel, apart from cars can't reach the driveway, things as usual.

During the Umbrella protests I always wondered what the staff themselves thought, and perhaps more so now, with the extradition bill being such a blatant mechanism for mainland China to erase Hong Kong's freedoms and the "two systems one country" agreement. It's got to be very worrisome and stressful to any Hong Kong citizen who prefers not living under authoritarian rule and censorship.

We stayed again Sat 06/15 - Mon 06/17, and flew back to the US on Monday night.
On Sunday , the staff in the lounge were telling folks to just hang at the hotel. I walked down to the Wanchai Computer center about 10am, and people were starting to gather in that area. I got back to the Conrad about noon. My room was on the 61st floor, and had the same view as the lounge on the 59th, and I watched police start closing off the streets.
I went down to the street (in front of the Starbucks) around 4pm when the crowd got big and got some pics and video. I also went to the mall around 6pm, and several of the shops had closed their storefront gates.
The Conrad also had 'security' folks inside the mall where you can enter the hotel.
I watched on and off from my room and the lounge, and people were still marching around 11:30pm , when I finally went to bed.
The streets were clean and open again by Monday afternoon. The Conrad was business as usual.
