Are there options for unlimited local rail day trips (a Bayern ticket, I think)? Taking the train up and down the Rhine, stopping at little towns in between the main cities was something I did a while ago. Strolling along the river, having a beer in a local place (though be prepared to have people look at you like you are lost

I did this once and enjoyed it quite a bit, though it was a long time ago.
From my VERY limited knowledge, it is not a "Bayern" ticket, as that would be a similar ticket for the Bavaria region. It would be a ticket for the Hesse region... Hessenticket maybe?

Again, I am open to correction by the true DB experts, but I don't believe they allow you to cross regions. The maps for each region are available in the link I posted above, toward the bottom of the page >> "Where is this ticket valid (rail maps)"

ETA, turns out many years ago, I may have violated the region rules when I did the trip up the Rhine from the Frankfurt area to Bonn.

For such a trip, a 49 EUR tickets may or may not be worth it, you need to make the maths. It is valid accross Germany for all public transports and train (except ICE/IC/EC trains). It is a subscription, but you can cancel it anytime.

Fra stopover
Was able to get a low mileage j ticket from Fra to dfw for me and my wife next June. We are coming off a cruise and flying from Ath to Fra paid ticket. We have 6 nights. Was thinking of staying on the Rhein or Heidelberg the first 3 nights and then staying at the airport Hilton or Sheraton on points. We could store our large luggage at one of those hotels after we fly in. Does it matter which one? I think both have fairly easy access to other thw sbahn and the train station Sunday is a euro cup game with die mannshaft so trying to get some tickets, if sucessful I believe the stadium is just as close to the airport as downtown. We figured we could just hop on sbahn to town on Monday or Tuesday to see a few sights. Where are the best beer halls ? Been to Nuremberg, Munich koln Dsseldorf Dresden Leipzig Berlin Freiburg so no need to venture far but never spent much time in hessen. Is there a multi day rail or sbahn pass we can get?

In Frankfurt? Frankfurt is not Munich. The traditional restaurants in Frankfurt are pplewoikneipen https://en.wikipedia.org/wiki/Apfelwein which are mostly located in Sachsenhausen.

Everytime I go go Frankfurt I stay one night before I head out to the rest of the country for Bundesliga matches. I try to stay at the airport Moxy in Gateway Gardens. Super convenient and comparatively cheap. There's a Rewe right next door. The S-Bahn station is a block away. Gateway Gardens feels safer than near the Hbf.
If you're looking for a beer experience outside Munich, I recommend heading to Bamberg. The beer halls are abundant and they are famous for their smoked beers. It's a longish train ride from Frankfurt, especially if you do what I did and booked the slowest regional train, but it's well worth the effort.

There is a small Zeppelin museum near the airport which is accessible by the train. It isn't big, but if you have an interest in aviation it might be worth a shout. I enjoyed it, and it killed most of an afternoon getting out to it and getting back.
