Emirates has unveiled the new first class cabin for their 777s at the Dubai Air Show on November 12th, 2017.
Notably, the new F cabin is fully enclosed from floor to ceiling, has a reduction from 8 seats to 6 total, had virtual windows for the center cabins and features video-based room service ordering.
Business and Economy cabins have also been refreshed, but not completely overhauled.

It's more the opposite, given the few aircraft (9 of them) with the new F and them having a full schedule you will not see EK use one of the gsme changer 77W's as substitute aircraft on a flight where F with 8 seats is fully booked.

Doesn't seem to be a pattern to it, but it's only because EK is one aircraft short in the 77W sub-fleet they regularly use on this route (old F, but new J).
I wouldn't count on it, just seems like pure luck whether you have a last minute swap on the day of your flight.

These aircraft are currently rotating through C-checks (-EQD is at ISL at the moment) and when needed the preferred substitutes are the 6F/42J/306Y (Camechanger F/J) configured aircraft, -EQH/I/J/K/L/M/N/O/P.
