Tonight is a cool weather favorite, oven roasted Turkey thighs with lots of roasted veggies: parsnips, sweet potato, fennel, onion, carrot Leftover veggies get made into soup later in week. |
Vegetable soup and French fries. (I volunteer at a meal for the homeless on Mondays and that's what was left over tonight!) Lucky I never met a potato I didn't like! :D

It's been a cold and rainy weekend in Houston, so dinner tonight is chili! Been simmering in the crock pot for ~7 hours now so it should be good and ready! I get hungrier every time I go and give it a stir.
