LOL...ah, yeah, with a 2 mile circumference around Orchard Rd, I can see it wasn't very helpful. To this day, I still can't read a map or use google maps, and mostly just rely on The Force to arrive at my destination. However, I do remember our cab ride, and can probably say with some certainty that from my hotel, we were headed in the direction Japan. That would be...ah....North?

No worries. Barring you knowing the details, it'd still be a challenge finding the place. There are neighbourhoods in Singapore where there are two or three hawker centers beside or across the street from each other. Then "kopi tiam" which are like mini hawker centers... Singapore is obsessed with food. :)

Do you happen to remember the name of the stall or the hawker center? Right now I don't think it would hurt to promote some of the better ones. Most of the stalls I've had there weren't great. I'm sure there are good ones, but most use too lean a cut to make a good piece of char siu.

Unfortunately, off the top of my head, I don't. A friend brought me there, but, if I recall, it was about 2 miles from Orchard Rd within a roofed complex with plenty of Hawker stands of many different varieties. I know, those instructions aren't great, but it's the best I can do right now. I think the stand was very famous, and it was incredibly good! It was perfect with the right amount of fat with many there just for the char siu.

Yes , somewhat countless , lots anyway , of “ coffee shops “ & hawker centres with varying superb specialties at each .

For char siu / roast meats , likely found in the Chinatown , Tiong Bahru , Beo Crescent / Havelock Road ones .. pockets all over the city - Coronation Road corner , Hougang , Serangoon Gardens , East Coast Road ..

Spoilt for choice really if one cares to drive / train wherever & Gojek / Grab back ;)

Now what & where shall it be today .. :)

Yeah, it's great!

I particularly enjoy those days where I have nothing on the agenda and free to roam aimlessly wherever it may take me. During one of these (mis)adventures, I somehow ended up somewhere in Chinatown in a specialty Cantonese duck restaurant on the second floor of some mall where I had one of the top 5 roast ducks in my entire life. A bad habit I should endeavor to correct is my utter thoughtlessness at times, and should have either taken a photo of the restaurant's name or take one of their business cards.

Early dinner , ngoh hiang ( 5 spices ) brought by friends .. also mutton soup ( Chinese / Hainanese version ) to be enjoyed later . From a hawker centre towards the north .
The noodles were delicious and soft ( as they should be ) and those fritters were really crispy crunchy .. hit the spot ;)
Quite a good selection chosen . Might have been more but forgot to ask , not sure what else was provided by the store . Probably homemade by the stall owners and not from some central kitchen , except the century egg .

More chocolate cake & a macaron for dessert

Served on whole wheat bread today with romaine lettuce. Garnished with Villagio Marzano tomatoes.

The celery is more for crunch than flavor. I’m not sure I really taste it, although there is a lot of it.

Sub the pickle relish for chopped dill pickles, and our recipe is the same! Sometimes I will add a pinch of Colemans dry mustard.

Back before I got lazy, I would add chopped sweet gherkins instead of the relish. I’ve done it with dill pickles but I crave the sweetness since I don’t get sugar from too many sources.

You could put them on a half shell. There is no requirement for them to be on a self made shell. They waste half of an oyster shell every time they shuck'em...

I'm trying to figure out if you're being serious or snarky, but presuming you're serious, most places that have raw bar options in Chicago typically have 4-6 varieties daily, split between east and west coast oysters.

It's tough to find the actual varieties listed on menus, since they may change daily and go out of stock quickly.

GT Fish and Oyster today lists:
  • Cascadia - WA - medium, firm, medium brine, melon
  • Coromandel - NZ - medium, plump, briny, cucumber
  • Fanny Bay - BC - medium, tender, medium brine, sweet
  • Beau Soleil - NB - medium, delicate, light salt, mineral
  • Cotuit - MA - medium, firm, medium salt, sweet
  • Wellfleet - MA - medium/large, tender, salty, savory
Hugo's Frog Bar only has two -- Kumiai from CA and Beau Soleil.

Eddie V's has:
  • Bluepoint - Norwalk, CT – Firm, Medium Brine, Light Mineral Finish
  • Sea Kist - Dutch Harbor Jamestown, RI - Firm, Full Brine, Umami Finish
  • East Beach Blonde - Charlestown, RI - Silky, Sweet Brine, Deep Mineral Finish
  • Malpeque - Malpeque Bay, PEI – Firm, Moderate Brine, and Clean Finish
  • Henderson Bay - Henderson Bay, WA - Full, Sweet Brine and Mild Finish

I'm sure it is, but I can't get past the cupcakes! (I kid, slightly. I've also had the chocolate topped peanut butter rice krispy treats, which are also excellent.) Sadly Sweet Mandy B's is now a bit out of the ways for me, and there's a great local bakery that we support, but I am always happy when a friend comes over bearing their treats.

Toasted pumpernickel with melted havarti (open faced) is a guilty pleasure of mine.

Dinner tonight was osso bucco with risotto. Delicious, but probably a few more calories than either of us needed in anticipation of Thanksgiving. Mr. CE cooked.
