All of that part that is just exposed tortilla is just going to be dry. When I make or order enchiladas they are completely covered with sauce (and cheese). I think this is why CE found them to be dry. |

I was just about to post the same thing. Do they come with a separate sauce pouch to pour over? I'm not even sure I'd call them enchiladas as they are pictured. I've never been able to eat an enchilada with my hands. I had assumed they at least came frozen with sauce that thawed when you heated the package. Good reminder why I don't buy prepared meals at TJ's :).
no crab legs today - plus we’ve plans next Monday so it’ll be 4/12 for the next king crab leg meal. |

All I can say from experience is that they’re not dry and we eat them weekly. Once they become a meal, I’ll take a picture with the package card separate with the ingredient info. It’s hard to take a picture of all the info while it’s still a package. It’s a 350 reheat product. They’re too soft and moist for hand eating.

If I was served those TJ ones in a restaurant I would send them back. I know you eat them weekly but have you tried others or restaurant ones or making your own just for comparison? BTW, my Costco now had the snow crab claws in the freezer section ...they never carried them before although I know that yours has had them for a while . Anyway, the package says that thawed crab should be eaten within 2 days. I think you are taking a chance with your 5 & 6 day old crab legs. I can't imagine going that long with seafood...best to buy what you can eat for one or maybe 2 meals . Those crab legs you buy are previously frozen. |

Yep, those were the lousy ones I bought. I had to smother them in salsa, because there is absolutely no sauce, which I think is the definition of an enchilada. Maybe they should just call them soft tacos or burritos or something, because they are not enchiladas. And not particularly good in my book.
But I guess someone besides Gao likes them as TJ doesn't usually keep products around that don't sell. They aren't for me though. These freezer ones look a bit closer to what I would call an enchilada but still are a bit naked. https://www.becomebetty.com/wp-conte...5-683x1024.jpg |

Exactly...I was thinking taquitos but those are fried...burrito or soft taco is a better description. I have had them in a restaurant as well as made at home where it is actually hard to figure out where the enchilada is under all the sauce/cheese. :p

It’s possible that my spouse doesn’t like too much sauce. I have been to Trader Joe’s when the enchiladas are sold out so someone buys them. I just eat them because my spouse likes them.
Yes, obviously someone buys them but they don't fit my definition of enchiladas and it is easy to buy or make ones that do. Turns out it is Margarita Monday https://cimg8.ibsrv.net/gimg/www.fly...1a19758f20.jpg So, Carne Asada with flour tortillas Refried beans with cheese https://cimg8.ibsrv.net/gimg/www.fly...8c92c50d46.jpg |

mojada is the taqueria term for a burrito with sauce, just like enchiladas. My favorite taqueria (Cancun) has enchiladas - I got some for somebody in September and I still refused to get myself anything there that day. It’s severe temptation as I walk past it - I’ve had many evening and late night taqueria meals there during the past 4 years. Well up to 2019! I walked past there both today and last week. They’re next door to my old favorite concert venue where I missed seeing Lydia Lunch perform in feb 2020 because I had just returned from CHICAGO and I was tired. I had some great concert nights there in 2019, usually tied with Cancun. It’s really huge that I don’t even go to Cancun now.
If you want to go there--then just go there instead of just talking about walking past the restaurant--it sounds pretty silly. If you want to eat the food, then just do it. |

Pappardelle pasta topped with mixed mushrooms, artichoke hearts, peas, and onions in a white wine reduction. With olive oil, cultured butter, and Parmigiano-Reggiano. Tasty and not too heavy.

Last night we broke in the new Weber with a couple of strip steaks, scalloped potatoes (in foil), and a veggie sauté on the stove because I didn't want to learn the side burner on the grill at the same time I was figuring out all the other features. I'm happy with the grill operation, and glad I didn't seem to make any noticeable mistakes in the 2 hours I spent assembling it last weekend.
Round 2 tonight, some Romanian sausages I picked up at Fresh Farms. Haven't ever had them so not sure what we'll have with them yet. Possibly some Lebanese pita, onion, and mustard. You can tell I was hungry when we go to the store if I end up with mystery sausage and a flatbread I've never bought before. I also grabbed a huge bag of shell-on roasted peanuts. I should not be allowed in that store before lunch. Oh, and I also had some mini sesame rolls stuffed with cheese for a snack. At least I restrained myself from cured meats, weird cheese, and smoked fish. For chgoeditor, we went to the one on Golf for the first time as we were over in that area. Kind of right where Des Plaines, Glenview, and Niles come together. Good size, similar to the one on Touhy. Seafood area was smaller, bakery was slightly smaller. Otherwise pretty similar to the Touhy location. Some different items but probably not worth the extra mileage from your starting point. |
most likely the Trader Joe’s chicken enchiladas tonight with guacamole & chips and a raw veggie platter. Still pondering zucchini for future platters.

I’m not doing any indoor dining until I’m vaccinated. It’s extremely unfun to eat tacos on the street in most parts of San Francisco. Plus it’s still expensive so it’s more fun to think about it. I’m also pretty sure that it’s less healthy than anything I’m cooking or prepping for my luncheon. Surely more sodium and sugar :-) |
Once every several months, we have a popcorn for dinner night. I will be breaking out the Stir Crazy tonight - one of the great all-time small appliances. You just use it until you break it (or drop it, which I've done) or lose parts and then just buy another one. I'm still amazed that almost all the kernels pop, even with cheap popping corn,.

Calibur cheeseburger carryout
assorted raw vegetables Leftover linguine pesto (Tiberino brand - overall I’m underwhelmed but maybe pesto pasta is underwhelming for me) mixed green salad blood oranges

Having them tonight actually. They aren't like hot dogs. There's no casing, just ground meat (beef and pork I think) and seasoning shaped into a sausage. I don't recall the sign exactly, but think they may have been called mitetti or something like that.

They’re going to be nearly cold by the time one is home - no styrofoam allowed in my city. So I don’t know when I’ll get carryout and I’m not having a Carryout Burrito because that’s just one meat. I would want 2-3 tacos with lengua, carnitas, and cabeza (separate). I haven’t had cabeza taco in a very long time, like a year. Oh how I love to eat head tacos. Maybe I need to visit a Mexican grocery store - they should have head and tongue for sale. t? Oh, I thought we were talking about take out enchiladas which I do think travel well. But you are right, tacos get soggy. |

Beer brats with deli mustard, roasted Brussels sprouts with garlic, cocktail shrimp with Trader Joe’s cocktail sauce. One of the cats inspected the shrimp for quality assurance. |
Tonight's lazy dinner. Took a ziploc bag of previously made piggy bits (roasted pork shoulder) from the freezer and sauteed with some onions. When crispy, I dumped a box of TJs black bean soup on this, added some red pepper flakes, poured into bowls and topped with some sharp cheddar. Warmed up some mini naan.

Mr. Fink comes from the birthplace of pesto - Liguria. Pesto is a religion to Ligurians. Any pesto that comes in a jar, can, plastic container or any other non-homemade method is a blasphemy and is always awful. It is the easiest thing in the world to make and the taste is nothing like those poor excuses for pesto. the homemade pesto idea sounds very fun. I’ll have to search some recipes. |

Take an insulated cooler, or ask them to package everything separately, so you can reheat at home. I've ordered cheesesteaks to bring home and have asked for them to be packaged with the bread separate from the steak/veggies/cheese.
Went to a new place on Monday, near the Covid vaccine location. 10 tacos, 2 loaded Indian fry breads, 6 styrofoam encased combos meals for $90. Combos were burritos, chicken tamales with killer green chili sauce, and some other good stuff. They had the best refried beans, their rice was quite mundane. |
