Well, I found eggplants in the fridge on Wednesday and was then told they were from the parent's visit to the Tuesday food bank, so I spent today making eggplant parmesan. I didn't fry the eggplant, rather baked it for 20 minutes then under the broiler to brown the breadcrumbs.

Tonight was a gourmet extravaganza of Trader Joe’s frozen beef tacquitos and Trader Joe’s frozen chicken tikka.

And a martini and some rioja.

oh, and some Dove chocolate.

Dateline Cocoa Beach: Tuna steak, medium rare with baked potato and cole slaw. Prior to the slaw, a server brought “fritters” covered in powdered sugar. Reminded me of beignets. After the plates were cleared, the server brought key lime sorbet. Mrs BV ate both and declared them delicious. All washed down with whatever tap was local, an IPA but I didn’t catch the name.

Gorgeous - I need to learn how to make this. I had the idea that eggplant needed so much time to dry prior to cooking.

It took four plus hours for me as salting the water from the eggplant took two hours. I think it needed more time.

fun! I believe this is my fear of eggplant. I once made myself an Asian eggplant dish and I was stunned with the timing.

Awesome! Totally awesome. I love Ethiopian food although it’s been a few years.

She got rather carried away


The quiche had ham sans bacon as person tasked to get some forgot , but included button mushrooms , cherry tomatoes and spinach . Quite delicious actually .. brave and good attempt .

Other than the shape I’d say she did well. I thought everybody put cheese in quiche. Kudos to her if she left it out.

I don't eat or cook eggplant....can't stand it but I am curious. Why is it best to let it sweat on a cutting board---isn't it just sitting in a puddle of water that way?

is that 60 seconds or minutes?
as much as I love eggplant parmigiana or eggplant with Chinese dishes, it might be more ev+ if I just outsource eggplant courses to others because it’s not like baking bread or things that my family will enjoy. I’m not a huge fanatic and can survive weeks (months) without it whereas I can’t survive weeks without any of beef or chicken or carrots or avocado or other vegetables.

Let me clarify

Eggplant: sweat it for 60 minutes. Could do 45 minutes if you're pinched for time. Cutting boards won't produce a puddle and lead to more even results than sweating in a colander. A light layer of moisture will accumulate on top of the eggplant slices, and you absorb it with a towel or paper towel. The eggplant should feel dry before cooking.

Mint & artichoke pasta with walnut sauce
Cheese pasta with balsamic vinegar

chocolate budino (pudding) with side of espresso cream
olive oil cake with strawberry sorbet
bonus scoop of basil sorbet (really good)

amazing food as standard for f+w.

Yes, found at Costco a while ago and misplaced for a few months. Could probably make a lower salt version of the sauce with Sichuan peppercorns and chili oil. Noodles are pretty tasty either way, had a good chew for dried noodles.

Had asked her to bake 2 types of quiche since she was “ experimenting “ . But she only had that dish to use .
Forgot to mention about the cheese , as assumed always cheese but did not know what she used . Did not want to embarrass this young couple further - already queried about bacon !
She actually added 3 cheeses - Gouda , mozzarella & red cheddar . Cannot tell from photo that it is 3 cheeses though you can sort of see that it is somewhat cheesy .

I have no plan whatsoever for dinner. There is nothing thawed, nothing ready to cook and no leftovers. We should arrive home at around cocktail hour so it’s possible it will be whatever nibbly things I find in the fridge and pantry. Tortilla chips and salsa, pita chips and hummus, sliced apple and orange, pretzels, unless I stop at the grocery store.

Same here...I usually plan in advance but somehow didn't. So I dug around in the freezer and found a frozen turkey burger. I also found some frozen rye bread leftover from St. Pat's day. So both are thawing in the fridge and it looks like I will be making a patty melt tonight for the first time in my life.

Opposite here, we are still working on cleaning out the refrigerator before we leave for vacation this weekend. Looks like tonight is some kind of whitefish and either kale salad or sautéed kale. We may be in your position when we get back a week later.

Not beautiful but delicious. Our local pub did a pork braised in sourkraut over cheese pierogi. I was planning to have a lot of leftovers but Mr. CE tried one bite and then couldn't control himself.

We got hungry on the way home and stopped at Ruby Tuesday around 3:30. The food was okay, but the place smelled bad. First time we’ve been in one since they filed for bankruptcy. They need to petition their lender to let them clean the carpets.

A couple oranges before bed and we’re satisfied. I’m going to the Polish deli tomorrow to select a kielbasa. They usually have about a dozen varieties of smoked sausage. Cabbage, carrots and red skin potatoes on the side,

Been there. I now have a few "break glass in case of emergency" items in my pantry for exactly the nights you've described.

Foreign Cinema supper with suburban friends airbnbing in Sf this week - menu from 5/15 was same for today.
kids menu is a 3 course meal of vegetables & fruit starter, ice cream dessert, and a chosen main. The children both got steam with potatoes - in this case, fingerling potatoes with zero taste. My child demolished their steak while the other child eschewed most so I took the leftovers.

How do you cook the cabbage & carrots for this type of meal?
I buy the Costco kielbasa which seems to be made my a marketed family called Kielbossa. Organic kielbasa, about $8.99/lb. I’m serving this Thursday along with Mac & cheese but I like your idea of cabbage & carrots.

It all goes in one pot. The extra garlic kielbasa lends its flavor to everything. I’ll have to take a picture next time. The sausages are huge, maybe as much as one and a half to two inches in diameter. Meat is ground and stuffed in the back of the deli and sold at $7-9 a pound depending on variety. They just cut off a hunk depending on how many pounds you ask for. I should take a picture of the case at the deli. It’s heaven for any sausage lover. They also make cabbage rolls that look tempting. I bought a couple smoked Hungarian sausages as well for this weekend.

I did buy it for that promo sale. Expired 5/9. My child had one last night for supper with a raw veggie tray.
in fact these sausage sales are now officially blocking me from buying Evergood until it’s on Costco sale. I will just wait. I’m in zero hurry and I’ve nowhere to go. Current sale is over aidell spicy mango chicken which I refuse to buy. Zero chicken sausage for me - I’ll just cook my own Costco chicken thighs!
