Well, I found eggplants in the fridge on Wednesday and was then told they were from the parent's visit to the Tuesday food bank, so I spent today making eggplant parmesan. I didn't fry the eggplant, rather baked it for 20 minutes then under the broiler to brown the breadcrumbs.

Tonight was a gourmet extravaganza of Trader Joe’s frozen beef tacquitos and Trader Joe’s frozen chicken tikka.
And a martini and some rioja. oh, and some Dove chocolate. |
Dateline Cocoa Beach: Tuna steak, medium rare with baked potato and cole slaw. Prior to the slaw, a server brought “fritters” covered in powdered sugar. Reminded me of beignets. After the plates were cleared, the server brought key lime sorbet. Mrs BV ate both and declared them delicious. All washed down with whatever tap was local, an IPA but I didn’t catch the name.

as much as I love eggplant parmigiana or eggplant with Chinese dishes, it might be more ev+ if I just outsource eggplant courses to others because it’s not like baking bread or things that my family will enjoy. I’m not a huge fanatic and can survive weeks (months) without it whereas I can’t survive weeks without any of beef or chicken or carrots or avocado or other vegetables. |
Let me clarify
Eggplant: sweat it for 60 minutes. Could do 45 minutes if you're pinched for time. Cutting boards won't produce a puddle and lead to more even results than sweating in a colander. A light layer of moisture will accumulate on top of the eggplant slices, and you absorb it with a towel or paper towel. The eggplant should feel dry before cooking. |

Costco? I have a box and don’t use the sauce package. Too much sodium :-) so just the noodles, cooked with other things. Yes, found at Costco a while ago and misplaced for a few months. Could probably make a lower salt version of the sauce with Sichuan peppercorns and chili oil. Noodles are pretty tasty either way, had a good chew for dried noodles. |

Forgot to mention about the cheese , as assumed always cheese but did not know what she used . Did not want to embarrass this young couple further - already queried about bacon ! She actually added 3 cheeses - Gouda , mozzarella & red cheddar . Cannot tell from photo that it is 3 cheeses though you can sort of see that it is somewhat cheesy . |

We should arrive home at around cocktail hour so it’s possible it will be whatever nibbly things I find in the fridge and pantry. Tortilla chips and salsa, pita chips and hummus, sliced apple and orange, pretzels, unless I stop at the grocery store.

Same here...I usually plan in advance but somehow didn't. So I dug around in the freezer and found a frozen turkey burger. I also found some frozen rye bread leftover from St. Pat's day. I’ll have to take a picture next time. The sausages are huge, maybe as much as one and a half to two inches in diameter. Meat is ground and stuffed in the back of the deli and sold at $7-9 a pound depending on variety. They just cut off a hunk depending on how many pounds you ask for. I should take a picture of the case at the deli. It’s heaven for any sausage lover. They also make cabbage rolls that look tempting. I bought a couple smoked Hungarian sausages as well for this weekend. |
