I can tell you that I add it in right at the end just to warm up and mingle with the eggs. Even more important than usual to not overcook the eggs for this dish. They should be slightly wet IMO. But I can't speak for others here. You can also season with a little Everything Bagel mix if you have it.

Big handful of cilantro (stems and all), 1 clove of garlic, zest and juice from a couple limes, a couple healthy shakes of dried oregano, one little shake of ground cumin, a little pickled jalapeno (because I am a weenie...most people would probably use more), a few squirts of both dijon and honey, a couple heaping TBS of mayo, S & P. Just whir it all together. Since my limes were crap, I probably should have just used rice wine or apple cider vinegar for the acid. |

Parked, Mr CE paid the meter only to realize it was a 15m zone. Back in the car, drive half a block, parked, paid meter #2, went into the restaurant and didn't like the seating option (couch, not table) so left. Drive to another rooftop restaurant we like. This time I go in to make sure we can get a table, give Mr CE the thumbs up and he pays meter #3. At this point you'd assume he'd pay attention, but no... He gets to the table only to realize he can only put 5 minutes on the meter. At that point he is so frustrated that I go out and move the car (space #4, meter #4) a few spots down to where parking isn't time restricted. Get back into the restaurant, look at the menu only to realize they've seriously pared it back since we were last there. (Literally only 2 entrees.) Finish our drinks and fortunately there were tables available at the sister restaurant downstairs, where we were finally able to eat dinner without moving the car again! |

My first attempt with, you guessed it, Rao’s pizza sauce! 😂Multicolored peppers and pepperoni. I finally got the caramelization right on the crust and loosened it before it got stuck on! I’m pleased. |

It's not as bad as it used to be, since they made pay-by-app available a few years back. I've parked in Wrigleyville for a Cubs game and just extended the meter from my phone during the game :). Sure it costs $15 or so, but much cheaper than paying some guy $40 to jam your car into his driveway with 4 others. But meters are never fun.

Rainy day off and on here, so probably homemade pizza tonight. Tomorrow looks nice enough to grill, so I'll be marinating a flank steak in the morning! We are planning our dinners for the week (which I hate), as we leave for our almost-exactly-one-year-delayed Mexico vacation next week and don't want a bunch of stuff sitting in the refrigerator. First time on a plane in around 15 months I think. |

I wouldn't recommend Authentico to you. It's a nicer, upscale restaurant with a large outdoor area (we sat inside). The tacos were very good. But the salsas were bland and the "spicy" guacamole, while good, was not spicy at all. Biggest disappointment was the margaritas. Even though they appeared to be hand-crafted from the menu descriptions, they tasted like they were made with canned limeade. I think if we went again it would be a warm summer day where we can sit outside and eat tacos or enchiladas for lunch...and no margaritas. But I'm still determined to find at least one place in the north suburbs that compares to the many good places we could go when we were in the city - and is open for a nice sit down dinner.

Funny margarita story -- we were at our local pub for dinner last night and I ordered a margarita. Our server asked what tequila I wanted, and I told him that I don't know brands, but would prefer something on the smokier side but not mezcal. And I wanted my margarita up and with salt. The server, who we know well, tells me he'll ask the bartender, who is the owner and who we also know well, to recommend a tequila. He brings my drink and I take one sip of it and it was too strong for me, so I ask him to take it back to the bar and ask for more lime and syrup. Anyway, while they're fixing it I tell Mr. CE that it was so strong I can still feel it burning in my stomach. Our server brings my drink back and tells me that apparently what the owner originally poured was a shaken tequila, served up with ice. LOL...not sure where the miscommunication came from! (Does anyone actually order tequila with salt and lime to sip?) The remade margarita was excellent!

Well it's Steak Saturday but I'm actually going to be home tonight so we'll grill up some steaks and baked potatoes and corn on the cob elote style and drink a bunch of beer. Should be great.

Leftovers: jambalaya with andouille sausage, Swiss steak with carrots and mash. New items: sweet corn and steamed asparagus. I’m trying to clear out the fridge before a trip tomorrow.
