IMHO, champagne goes with everything. It helps to solve the conundrum of whether to choose red or white for a particular course.

Dinner at a restaurant for my wife and I:

Aperitif: Le Vigne Di Alice Os Natural Brut Ros sparkling (Italian)

Wife:
App: Fried Eggplant “Meatballs” with whipped ricotta, basil, cherry tomatoes
Main: Rigatoni with Pesto Genovese, English peas, ricotta salata Wine: Attems Sauvignon Blanc (Italian)

Me:
App: Burrata & beets with basil-pistachio pesto, candied pecans, aged balsamic vinegar
Main: Denver steak with black truffle gnocchi Wine: Tenuta Olim Bauda La Villa Barbera D’Asti

Everything absolutely delicious.

A local food stall's rendition of hainanese chicken rice. Wasn't too bad although they didn't give me dark sauce.

We have been making it 3-4 times a year for 40 years. (One of my top 5 favorite meals) Tried it every conceivable way. Crockpot/slow cooker on high, barely covered with water, bit of salt, exactly 5 hours. Perfect every time. The one time we did it in a low oven uncovered but basted was a dry tough disaster. Tried it again covered, and it was slightly better, but ended up putting it in the food processor both times and making hash. We'll be making ours Sunday. Tender and juicy.

PS. Always buy brisket, never round.
