I confirm that I composted the bones despite feeling tempted to do more with them! I even had to pull out 2 canning jars from our extra pantry for the stock. I’m actually curious to want to roast another turkey; perhaps I’ll buy an unseasoned one to season myself. btw turkey heart - or whatever is within the carcass bones - it’s already been roasted so do I just eat it like any other turkey part? I have no idea why you roasted the heart but I am completely grossed out at the thought of it so suit yourself. In my house the heart and liver go straight into the garbage. The neck is great to include with bones for making broth. In fact some places sell just necks and back bones because they are great for making stock. |

Trust me...those bones have served their purpose and given up all that they have. There is collagen and marrow in bones that goes to flavor the stock and give it body. Throw them away unless you want dishwater flavored broth. Since you never in your life had any use for broth before I doubt that you will now start using gallons of it. I suggest using what you have made so far. If you are keeping it in the fridge and don't use it before 3 or 4 days, bring it to a boil before using it in something in case bacteria has developed. Also, now it the time to freeze or throw away whatever leftovers don't get used up today.

leftover pizza
mixed green salad Assd raw veggies turkey sandwiches (breast meat) note - we ran out of 90% of our turkey leftovers (only breast meat for The Fred) so I had to take out turkey from the freezer and then put it in the fridge. I’ll have turkey for supper. It’s not yet fully thawed for my luncheon. I’ll freeze the stock on Monday; can I push them into double zip locks because I’m afraid to freeze the glass jars. Or can I freeze the glass jars? Will they break later going from freezer to fridge?

No organ meats for me either EXCEPT chicken/turkey hearts and gizzards. They always get boiled then chopped up in the gravy. Also once or twice a year I'll buy a package of them to cook up and eat for snacks. Love 'em! Edit: Actually I also like beef heart occasionally, and lengua is wonderful in tacos etc.
