Pesto di Pra' with my pasta, followed by a black truffled pecorino. Both wildly expensive, of course, but so good.

Good news/bad news.
 
My wife made some beef short ribs, with a nice spicy marinade, and finished on the bbq with some good bbq sauce. Very tasty! The bad news, it’s local Indonesian beef which can be very, very tough. If we stay a long time here, I need to get a sous vide machine.

Don't discount a pressure cooker like an Instant Pot either. I use both methods for tough beef. Short ribs are particularly good in the pressure cooker in my experience. Marinate, sear, braise, and serve.

I love my short ribs that I've done in the sous vide but it is a 2-3 day process. Here's the guide I used for making them.

At our house in Indonesia, we don’t have a pressure cooker or instant pot, either. Just normal, smaller size stove/oven with gas tank, and a couple of gas bbq’s.

Normally we are just here for a month or two, before traveling around within Asia. This is the longest we’ve stayed at the house, since, well, forever. :)

Ahhh. Understood. Well, if you're stuck at home again at any point I would consider picking up one. We use ours at least 3-4 times a week.

I second the recommendation of a pressure cooker, even if you will only use it a few times/trip.

wow that’s a gorgeous guide. I lack these machines but they sound great. I love short ribs as a curry or stew, so it’s stove top in a dutch oven for 2-3 hours max. Still delicious.

Last night, an excellent chicken breast with pesto, taleggio and paprika, with roasted baby tomatoes, and green beans from the garden. Finished off with some extremely disappointing supermarket peaches, which were completely tasteless, and meringues, still warm from the oven.

My wife just makes them on the stove. Pan fried with a bit of oil.

A big favorite....looks absolutely gorgeous. I can't wait for some good tomatoes and some Burratta.
