Jet2 used 737-300QCs (quick change) for this purpose, I think primarily on a Royal Mail contract which expired in 2017 (Jet2 didn't try to renew it). They've only got one of that aircraft type, now, the other seven have been retired.

Try this:
737-700C Convertible

And this:

G-CIVM has just departed for St Athan. Suspect it will be the first of many.

Edit: CIVM was retiring anyway, that will teach me to jump to conclusions.

I just caught it outside my window in Bristol in the beautiful sunshine thanks to your post

It's a 737-200/-300 combi. I've only seen them on the routes to Canada's arctic. Air North and Canadian North are operators. (not my photo)

And I’d be amazed if they didn’t keep a lot of the big ones running as freighters - cargo yields are skyrocketing at the moment. 77Ws could probably make money with no pax on some routes at the moment.
They could dump some next to the TUI max's at the end of the taxiway at MAN.

Cambridge Airport was due to close as an operational airport with Marshall Aerospace the owners looking to relocate. Cambridge City Council have plans to build housing on the site. But at this present time it's still open although not with many movements.

Oxford Airport runway is 1'552m / 5'092 ft so not capable. Lack of apron space, narrow taxiways. You can totally discount Oxford Airport.
Blackpool has a decent length runway and surrounding space, however ever since commercial operations stopped I'm not sure it would be up to par as a dumping ground.

So in my teen years as an air cadet, I flew chipmunks out of Manston. The runway was massive (can't remember the length) and was the designated Major Diversionary Airport (may have a different term now) for Heathrow for any landing likely to dig up the runway, or a hijack though I think Stansted now deals with the latter issue.

Kemble is still used by Titan for maintenance of the 734 freighters but I don't know it's length relative to the alternatives and the performance of a 734 vs an A319 / A320. I think there is probably a lot of un-used space at Heathrow (including some of terminal 4) to store aircraft.
The most logical non civil airport would be Brize Norton which has the RAF A330 fleet, and recently had the WAMOS 747 land with repatriation flights. It's secure and an hour's drive from Heathrow. I am also assuming, that retirements up to the end of the year are likely to come forward to reduce costs. Equally, not withstanding the materials required - that maintenance and mods (seating layouts etc) could in theory be accelerated at sites other than LHR . ie using the seats from CIVM as a second set of float for 747 refurbs.

I'm assuming there is a sweet spot between mothballing aircraft which take time to de-mothball / get back to Heathrow, rotating the fleet, and keeping part of T5 open. If you assume US carriers drop to nothing or next to nothing, AND Virgin park aircraft at T3 there is still room. QANTAS is dropping the A380 to london this week or next and going down to two departures a day - both to Melbourne and Sydney via Perth on 787-900s and so once everyone has decided what they're doing - I think the solution will become clear.

When this is all done, the parking and storing has to be (relatively) easy to undo as services ramp up again). I note citiflier has now parked 6/7 E170s and E190s at Norwich and 1 at Southend - all an easy drive from LCY.

The following London City frames are now in storage at Norwich/Southend:

G-LCYD/P/R/S/T/U/V/W/Y
G-LCAA/B

The following following London City frames are in maintenance:

G-LCYL/O

This means only 11 LCY aircraft are operating at the moment.

As regards LHR if they went to single runway operations that would free up a lot of space too. At what point would the traffic be of a level where only a single runway was required?

This will never happen, LHR would need to have 2 runways at all times even during these quiet times. This would be due to the fact that if ever one runway becomes non operational for various reasons, then they could keep planes flying using the other runway as single operations
